Guest guest Posted February 13, 2009 Report Share Posted February 13, 2009 Last night at my NW Earth Institute class, Menu for the Future, a well- read raw foodist was telling me that young Thai coconuts are soaked in formaldehyde (keeps the white from turning brown). Also, that the nutrients from nuts are not available to us unless they are soaked first and that they lose 80-90% of their fat in the soaking process. Is this true? However, Kevin Gianni of the Renegade Health Show said he researched this issue and found it to be not true. You might be able to see the show he discusses this in his archives. Also, I asked the produce manager at Central Market and he said he had never heard that coconuts are soaked in anything before shipping. Don't know if any of that helps. It can be really difficult to ferret out the truth! I haven't heard about the nut issue, except to say that so many nutritionist recommend soaking before eating. I've been reading Nourishing Traditions by Sally Fallon from the Weston Price Foundation and she also recommends soaking nuts. I'm anxious to read what others here have to say! Peace on earth. Guest guest Posted February 13, 2009 Report Share Posted February 13, 2009 Hi Suzanne, My main understanding of the benefit of soaking nuts is that it adds water back into a fairly dehydrated product, which helps with digestion. Not sure about the fat issue--doesn't *sound* likely, but I'm curious to hear from someone who knows more.
