Just for fun, I thought it might be nice to read who

is out there... maybe tell us what you are having for

dinner tonight and who you might be dining with.

 

I am going to make some simple food tonight. My

youngest is down with some stomach bug and will

likely just stick with crackers and electrolite beverages.

I am going to make the rest of us a potato-vegetable

casserole. Not exactly certain of the recipe, but will

make notes as I cook to share here tomorrow, hopefully.

I will be dining with my immediate family.

Hope everyone is doing well.

I have a few recipes to post later on....

I am going the easy route as usual and having an " Amy's " brand Tofu Vegetable

Lasagna.

it's just gonna be my 3 yr. old son and i for dinner

tonight....hubby teaches a grad class on mon. nights

and doesn't get home til after 11.

i'm going saute some sliced zucchini and minced garlic

in olive oil, add tomatoes and salt, pepper, and a

little italian seasoning and then toss with angel hair

pasta. i'll have to add spaghetti sauce to his...to

get him to eat it. : )

I ate alone, and I 'pigged out' on grapefruit. :~) Just too tired from

all this packing and moving to cook anything........not that anything

is unpacked yet anyway!!

I had to work tonite, so I made a casserole that sounded pretty

easy. " Kathie's Vegetarian Casserole " that was taken from a bag of

wild rice. Basically a white sauce, with cheese, mixed with cooked

rice, beans, and steamed vegetables, covered with breadcrumbs and

baked in the oven. It sounds versatile, like perhaps you could vary

it using pasta instead of rice, or different beans/veggies... I will

find out what the guys (DH & 5-yr old son) thought of it in the

morning, and post it if it rated a thumbs-up.
