Guest guest Posted March 31, 2003 Report Share Posted March 31, 2003 Just for fun, I thought it might be nice to read who is out there... maybe tell us what you are having for dinner tonight and who you might be dining with. I am going to make some simple food tonight. My youngest is down with some stomach bug and will likely just stick with crackers and electrolite beverages. I am going to make the rest of us a potato-vegetable casserole. Not exactly certain of the recipe, but will make notes as I cook to share here tomorrow, hopefully. I will be dining with my immediate family. Hope everyone is doing well. I had to work tonite, so I made a casserole that sounded pretty easy. " Kathie's Vegetarian Casserole " that was taken from a bag of wild rice. Basically a white sauce, with cheese, mixed with cooked rice, beans, and steamed vegetables, covered with breadcrumbs and baked in the oven. It sounds versatile, like perhaps you could vary it using pasta instead of rice, or different beans/veggies...
