Please post who you are, where you are and what type of vegetarian you are or aspire to become... share whatever else you wish beyond that as well. Doesn't have to be long, or detailed. This is just for fun. QOTW (question of the week) If you were hungry and putting together your best salad, what would you put in the bowl? Describe it... My response: Roll Call~ I am PT aka feral; listowner here. I live in southern Oregon currently. I am a lacto-ovo vegetarian but love to cook many vegan dishes. I also live in a " mixed " household, meaning my husband and children are not vegetarians. This presents some unique challenges for me in meal planning so I am always on the lookout for delicious vegetarian dishes that can bridge the gap so we can all sit down at the dinner table and enjoy eating healthy food prepared in a timely manner. QOTW~ If I were hungry and putting together my best salad, I would add lettuce (buttercrunch or baby greens bag blend), shredded carrots, sliced raddishes, garbanzo beans or kidney beans, sunflower seeds, BACOs (imitiation bacon bits made of soy), and maybe a chopped hard boiled egg. I would top all this with a nice Balsamic viniagrette or my favorite jarred dressing called Lighthouse brand Jalapeno Ranch. I am currently working in the corporate world in Cambridge, MA, but aspire to become a vegetarian chef. I'm also taking an Herbalism Apprenticeship course. Drink your nettles! My perfect salad is pretty much a vegetable " garbage pail " Throw it all in, I'll eat it: Crisp lettuce, baby spinach leaves, lots and lots o broccoli, shredded carrots, thinly sliced red onions, green and red bell peppers, a cauliflower head or two, some sugar snap peas, a few chunks of tofu, and some pepperoncinis. Top it w/ balsamic vinegar and some freshly ground pepper. YUM! ps -- it would be in a bread bowl. Guest guest Posted April 15, 2003 Report Share Posted April 15, 2003 Hi, Okay - I'm ova-lacto vegetarian living with my omnivorous wife. Unfortunately I don't prepare that many things from scratch due to having a job that takes up way too much time (electrical engineer in Silicon Valley). I've been collecting recipes and a few vegetarian cookbooks. I try a new recipe every once in a while. My wife, who prefers things she's eaten innumerable times in the past, isn't always particularly happy with my experiments. Guess I need more practice. We don't actually sit down at the dinner table. More often than not it's on a tv tray in front of our separate TV's. We grow our own peppers and tomatoes during the summer and into the fall. We grow a fair number of herbs and I'm trying to increase those, some for eating, some for teas and various and sundry concoctions, which I'm also very new at, some for drying and saving or using for smudging. Best salad? Well, when I do make a salad that I like it's usually one of the kitchen sink varieties with various types of lettuce, spinach, mushrooms, carrots, radishes, tomatoes, a little garlic, garbanzo and/or kidney beans, some sprouts, maybe some nice green and/or red onions, some sesame seeds, sunflower seeds, a little basil is nice, some green & red sweet bell peppers and some hot peppers (thai, cayenne, jalapeno or whatever is at hand), sugar snap peas, broccoli, some croutons, maybe a few beet slices, and whatever else comes to mind at the time. All should be sliced into small bite size pieces. Dressing would be dependent upon my mood at the time. With some freshly ground pepper sprinkled over the top. I have been vegetarian for 2 years, starting was not easy as I am not a big vegetable eater. My tastes have improved. I'm an ovo-lacto veg; besides just me, I often cook for the bf who's an omnivore but likes veggie food and is very supportive of my choices (lately he orders vegetarian meals when we go out to eat, even), and his kids (definite carnivores, but think its fun to try to cook for me on occasion). The latest kick around our household is dealing with the bf's high cholesterol/triglycerides. A veg diet is a good start, but I'm amazed at the fats in the things I eat regularly. As for salad, I prefer baby spinach as a base for my salads; I've never been a big fan of lettuces, unless I'm able to pick them fresh from my garden and get a good mix of them. To that I add slices of English cucumber, wedges of fresh vine-ripened tomatoes, roasted red peppers, slices of avocado, and a sprinkle of walnut bits. I dress it with balsamic vinegar and just a drizzle of olive oil, and top it with freshly cracked pepper. I'm not strict about my diet......Hmm, but I am probably about 95% Vegetarian, 50% vegan, 15 -20% raw. I go thru periods where those figures are much higher....but on average, this is probably accurate. Ahh....my favorite salad? hard to decide! I'll list 2..... mixed baby greens, mostly spinach, topped with olives, mushroom, shredded radish and carrot, Baco's, *alot* of sesame seeds, sprinkle of sunflower seed, topped with mango pepper vinegar and walnut oil [or occasionally topped with bottled lite caesar]. or.... spinach leaves, mandarin orange segments, pignolia nuts, topped with balsamic vinaigrette. Ahhh, one more..... black beans topped with shredded iceberg lettuce, and guacamole. I live in the middle of 'Cow Country' (Omaha, Nebraska) where until not too long ago, the natives either questioned my sanity, wondered what planet I was from (I'm not from around here originally), and a few would get downright abusive (they do love their steaks and chops around here!). It's gotten a lot better though, plus I work in a university setting where most everybody is from 'somewhere else'. Lacto-ovo for probably going on 20 years, almost totally vegan the last couple of years. But as long as the Swiss continue to export Chocolate ... *sigh* At home, I get to cook and eat what I like since it's just me and the cat (definitely NOT a vegetarian, but even in her previous carnivore home she disdained 'people' food). My favourite salad would be to take leftover Morningstar Farm Hot Wings, slice them diagonally, then crisp them in a bit of sizzling margarine. Pour this over lettuce (whatever kind is handy), a few sorrell leaves, sliced mushrooms, quartered cherry tomatoes, paper- thin sliced cucumber (with the peel still on), spicy bean sprouts, red onion, a few raisins, maybe some Chow Mein noodles, sometimes I throw in some Durkee Onions. Just moisten with Ranch dressing (plain or cucumber). Guest guest Posted April 17, 2003 Report Share Posted April 17, 2003 hi I quit eating dead animals the beginning of 89. unfortunately I am still very overweight but my colestrol is only 120 these days so there is something to being a vegetarian. I still have dairy and somethings I eat contain egg but I never liked eggs straight even when I ate meat. I also cant stand it when I tell people I'm a vegetarian they ask " do you eat fish?
