These are wonderful, and coming in at only 40 calories per suggested serving means you might be able to eat a double order depending upon how many calories you are allowing for in the meal. Enjoy! Sweet Potato Fries 1 pound sweet potatoes 1 egg white 2 tsp chili powder 1/4 tsp garlic powder 1/4 tsp onion powder Peel amd cut potatoes into 1/4x1/2-inch strips. In a bowl, combine egg white and seasonings; beat well. Add potatoes; toss to coat. Place in a single layer on two baking sheets coated with nonstick cooking spray. Bake, uncovered, at 450 degrees for 20 to 25 minutes or until golden brown. Yield: 8 servings Nutritional analysis: One 1/2-cup serving equals 40 calories, 20mg sodium, 0 cholesterol, 9gm carbo- hydrate, 1gm protein, trace fat. I *love* sweet potatoes..............now I wonder, any body have any ideas of how I can veganize this? I use grape seed oil for cooking- I have heard that olive oil can turn to " bad " oil when heated too high....it supposedly is more healthy than the olive. I would give more details about it, but it's been too long since I read up on it. I don't recall the name of the product offhand, but I have seen it sold at my grocery store before in the healthfood section; comes in a box and is a powder you mix up. You could also just mix a bit of soy flour or rice flour with water to get the desired consistancy. I believe the egg white in this recipe is there mostly to provide a way to keep the seasonings on the sweet potato wedges.
