[recipe] Sweet Potato Fries (nutri analysis/diabetic ex)

Who says you can't have fries when watching your diet?

These are wonderful, and coming in at only 40 calories per

suggested serving means you might be able to eat a

double order depending upon how many calories you are

allowing for in the meal. Enjoy!

 

Sweet Potato Fries

 

1 pound sweet potatoes

1 egg white

2 tsp chili powder

1/4 tsp garlic powder

1/4 tsp onion powder

 

Peel amd cut potatoes into 1/4x1/2-inch strips.

In a bowl, combine egg white and seasonings;

beat well. Add potatoes; toss to coat. Place in a

single layer on two baking sheets coated with

nonstick cooking spray. Bake, uncovered, at

450 degrees for 20 to 25 minutes or until golden

brown.

Yield: 8 servings

 

Nutritional analysis: One 1/2-cup serving equals

40 calories, 20mg sodium, 0 cholesterol, 9gm carbo-

hydrate, 1gm protein, trace fat.

Diabetic exchange: 1/2 starch

Oh, YUM! this sounds wonderful. I *love* sweet

potatoes..............now I wonder, any body have any ideas of how I

can veganize this? Do you think there is something I can use

instead of the egg? or just leave it out?.......I know, I know, I'll eat

pork, but I don't eat eggs or dairy...go figure.

Hey Pixx.... i make my fries like this and just use a little olive oil.. helps

the stuff stick. Will up the fat but it's good fat :o)

Cool! That make sense! thanks a bunch!

 

I use grape seed oil for cooking- I have heard that olive oil can turn

to " bad " oil when heated too high....it supposedly is more healthy

than the olive. I would give more details about it, but it's been too

long since I read up on it.

There are egg replacers you can buy. I don't recall

the name of the product offhand, but I have seen

it sold at my grocery store before in the healthfood

section; comes in a box and is a powder you mix up.

You could also just mix a bit of soy flour or rice flour

with water to get the desired consistancy. I believe

the egg white in this recipe is there mostly to provide

a way to keep the seasonings on the sweet potato

wedges. Just use anything that will not add flavor and

help the seasonings to stick.

Yeah, I had thought about EnerG egg replacer, but I thought that

may change the taste or texture too much....I dunno tho [?]
