My Lady and I have birthdays 2 weeks apart and, while she generally takes me out for dinner on my birthday or near it, I cook her a special meal for hers. When I asked her what she wanted this year, she didn't even have to think about it: " your tomato soup and those " veal " birds. " It seemed to me that I should share these recipes with the List. The first is vegan (or can be), the second is not (but probably can be if you can get vegan prepared gluten). My notes on making these follow the recipe in question. I will break the recipes up into one per email because that is how I prefer to receive them. Enjoy! Lee-Gwen Spicy Tomato Soup (from the " Moosewood Cookbook - 15th birthday edition " by Mollie Katzen) 4-6 servings 1 tb olive oil 1 tb butter (optional) 1 1/2 cups minced onion 3-4 cloves garlic, minced or crushed 1/2 tsp salt 1 tsp dill (or more, to taste) lots of freshly ground black pepper 2 cups water 1 tb honey (optional) 1 1-lb., 12-oz can " crushed concentrated tomatoes " 1 tb mayonnaise or sour cream (lowfat okay) 2 medium-sized fresh tomatoes, diced for} yogurt the} finely minced parsley and/or basil leaves top} finely minced scallions or chives 1) Heat olive oil (plus or minus optional butter) in a kettle or a Dutch oven. Add onion, garlic, salt, dill, and black pepper. Stir over a medium heat for about 5 to 8 minutes, or until the onions are translucent. 2) Add canned crushed tomatoes, water, and optional honey. Cover and simmer over low heat for 2- - 30 minutes. 3) About 5 minutes before serving, whisk in mayonnaise or sour cream, and stir in diced fresh tomatoes. Serve hot, topped with yogurt and freshly minced herbs. MY NOTES: Rather nice - only used 1x425g tin whole tomatoes - added 3-4 tb tomato paste. Didn't add fresh tomatoes - seemed totally unnecessary. As did the cream. also: Used 1x810g tin diced tomatoes - no paste - Added " some " dry basil. I am a Taurean (and, much as I don't actually believe in that stuff, I have to say that I am horribly stereotypical *laugh*) and my Lady is a Gemini.
