Guest guest Posted June 4, 2003 Report Share Posted June 4, 2003 I love peanut butter. It goes so well with everything. I thought I'd send along some of our favourite PB lunches. Sandwiches on plain old bread included: PB with jelly, jam or honey PB with apple slices and honey PB with onions and mayonnaise _ don't know it till you've tried it PB with raisins and walnuts or any nuts PB with potato chips PB with cream cheese and celery PB with bananas of course PB with cheese In a pita pocket, Mix 1 cup of PB with 1/3 cup Tahini, add chopped veggies of your choice and stuff into a pita. Great stuff. Add some alfalfa sprouts and you've got heaven in your hand. Mix 1 cup of PB with 1 mashed banana, 2 tablespoons of honey, 1/3 cup of chopped nuts and 1 cup of raisins. Stuff into pitas. Also really good on crackers. Mix 1 cup of PB with 1/3 cup mayonnaise, 1/4 cup chopped onions, 1/2 cup diced apples and 1/2 cup chopped nuts. Stuff into a pita. Cool. Fun Stuff Ants on a log. Spread celery stalks with PB and sprinkle with raisins. PB Dessert pizza. Buy a couple of medium ready made pizza shells or make your own. Mix 1 cup of PB and 4 oz of soft cream cheese together till smooth. Spread on the pizza shells. Dice 3 apples, 2 peaches, a pear, chop up 1 cup of maraschino cherries and add 1 can of crushed pineapple. Spread over the pizzas. Grate 2 cups of cheddar cheese and sprinkle over the tops. Bake in a Pre-Heated 400 degree oven until the cheese is bubbling and crust is done. You can also omit the cheese and drizzle with Icing instead after you bring the pizzas out of the oven. I like the cheese best. Bananer Pin Wheels - cut the crust off of 4 slices of bread. Roll really thin with a rolling pin. Spread with PB. Cut a banana in half lengthwise then in half across the middle making 4 peices. Place each pies on a piece of bread near the edge. Roll up. Secure with a toothpick and chill for 15 minutes. Cut into slices. PB Sauced Bananas - place 1 cup of PB and 1/3 cup of tahini in a sauce pain over low heat. Add about 1/4 cup soy milk. Stir till melted and beat well. Slice bananas into bowls. pour sauce over top. Top with crushed nuts. PB Balls - 1 cup PB, 1 cup powdered milk, 1/3 cup honey, 1/2 cup chopped peanuts. Mix well. Roll into 1 inch balls. Place on wax paper. Chill. Mmmm Ever so good. You can also shove a 1/2 of a maraschino cherry into the centers for an added treat. Other great PB uses. Mix equal amounts of PB and cream cheese and use as an icing and a filling between cake layers. Melt PB and Tahini together and pour over any fruit or dessert dish. Sounds terrible, I know, but everyone who tried it agreed that it was a great combination. My ex-FIL used to make me peanut butter and tomato sandwiches, sprinkled with celery salt and topped with some crunchy lettuce leaves. They were great as well. I don't eat much peanut butter anymore, because of the incredibly high fat content, but I think I'm going to have to have one of these sandwiches for lunch. (Only negative I found is that like the old-fashioned variety of peanut butter the oil has a tendency to separate to the top so there's a need to be careful when opening the jar in order not to have the oil spilling all over.) Guest guest Posted June 5, 2003 Report Share Posted June 5, 2003 This lady I used to work with used to spread peanut butter between 2 Ritz crackers to make a sandwich, then dipped them in melted chocolate (it actually was some special type of chocolate you can get in the baking section and the name is eluding me....someone help me out here!!) and let them cool.
