Guest guest
Speaking of dill pickles or any pickles for that matter, I am on a pickle tear as of late. I really like pickles, especially my Grandmas and Aunts homemade canned bread and butters. Does anyone have any store bought favorites? Spear, whole, slice,....dill, zesty, garlic flavored....anything goes! How bout them " stackers " ? TIA Shawn P.S. Are there any canners in the group? _______________ Tired of spam? Guest guest
I make my own pickles. I'm still eating the summer of 2000 batch. I also can tomatoes and various fruits when they are in season. Guest guest
Dave, sounds good. What kind of pickles, tamaters and fruit? Do you season them? Preserves? What is your favorite canned item? Guest guest
I vacation during the summer in the historic gold country of California. There's a bunch of farms and roadside stands east of Stockton where I buy directly from the farmer, his wife, or his kids. Mostly, I buy what looks interesting and has the best aromas. My pickles are dill spears in wide-mouth quart jars. Usually, I can the smaller pieces in half-pint jars for gifts and potlucks. I grow 2-3 kinds of tomatoes in an inner courtyard of my house. I often get 20-30 quarts canned during the season. I use about 75% of them during the following winter and share the rest with my neighbors. There's no pattern to my canning fruits. I don't have a favorite. Whatever the best buy at the roadside stand is gets my full attention. They are usually canned in their own juices with filtered water added as needed. Minimal seasonings to enhance the flavors I like. I have made jellies but not often. Dave _- matrixenos -_ [matrixenos] Friday, June 06, 2003 2:05 PM RE: Dill Pickles? Dave, sounds good. Guest guest
Mmmmmm. Nothing better than a nice garlicy dill pickle; you just have to make sure the person you are kissin' eats as many as you do. *lol* I love the spicey Kosher dill by Vlasic(sp). They have what I call a pickle spice scale on the label, and according to that the #4s are my favorite. On veggie burgers, I love sliced dills and on my veggie hot dogs I love dill relish with a spicey brown mustard; some finely minced onions if you got them. Dang, I am ready for a BBQ now and it is only 7am! *lol* ~ PT ~ P.S. Never tried canning yet. My galfriend tells me it is wicked easy and she will teach me sometime. I make candles, so I figure it can't be much harder than that, but I'd still like to watch someone do it and be a " helper " the first time around. Sometimes I add a few of my pickled hot pepper slices to a sub sandwich or veggie burger, but I hadn't thought to add them to bangers. " MMM gotta add jalapenos to everything! Oh and try green onions on bangers too. I think I'll be breaking out the MS spicy black bean patties tonight and make a sammich with all the trimmings (the best part). Add a slice of cheese and a couple of MS breakfast strips to that on toasted bread. Then of course, dig into that Vlasic jar and pop out a couple of spears for the side. I expected the Vlasic to be twice as good as the generic that i've been getting. The taste is as good as the others, but the size of the spears is plumper. I think I'll try the garlic ones next. I wonder if I pop some sliced raw jalps in the jar if the heat will infuse into the pickles in a couple of days. I guess there's only one way to find out....but gotta eat up this batch first. Guest guest
I don't see why that wouldn't work. Maybe if it is too mild doing that, chop up a habanero and plop that in the jar. MMM add salt and Tabasco to a dill, yum. (ok weird tangent here) I had a friend who liked olives so much, she would drink the brine or juice that came with the olives straight out of the jar. Whew.
