Guest guest Posted June 12, 2003 Report Share Posted June 12, 2003 I discovered last nite that the bf had never had ratatouille (can you believe it????), so that's what I'm making for dinner tonite. I can't seem to find the recipe I've always used, so I went hunting on Aubrey's Aubergines and found this one that cooks in the crockpot (it's getting hot and muggy here already, and the crockpot doesn't heat up the kitchen and make the airconditioning work overtime). It looks fairly close to what I've always made, but it doesn't have the balmasic vinegar I've always added. I'm thinking of just stirring a little in towards the end of the cooking time anyway. What do you think? Does anyone have a TnT Ratatouille recipe they'd like to share? Crockpot Ratatouille 1 large eggplant, peeled and cut in 1 inch chunks salt 2 medium onions, chopped 2 cups chopped fresh tomatoes 1 large green bell pepper, cut into 1/2 inch squares 1 large red bell pepper, cut into 1/2 inch squares 1 large yellow bell pepper, cut into 1/2 inch squares 3 medium zucchini, sliced 3 tablespoons olive oil 3 tablespoons dried basil 4 garlic cloves, minced 1/2 teaspoon ground pepper 1 can tomato paste, (6 ounces) 1 can pitted ripe olives, (5 3/4 ounces) drained and chopped 3 tablespoons chopped fresh basil Sprinkle eggplant with salt and let it drain in a colander about an hour. Press out excess moisture. Rinse eggplant with water and pat dry with paper towels. Place the eggplant in a 5 quart crockpot. Add onions, tomatoes, bell peppers, zucchini, olive oil, basil, garlic, pepper and 1/2 teaspoon salt; mix well. Cover and cook on High about 3 hours or on Low for 7 hours). Stir in tomato paste, olives and fresh basil. -- Sherri The NRA says, 'Guns don't kill people - people kill people.' That may be true, but I think the gun helps. It is getting hot and I use mine a lot then. Love aubergines! I am rather shocked I haven't tried this recipe since it features one of my favorite veggies.
