'Non-taste'? Tastes like *cow's* milk to me - different from goat's milk, say, and certainly different from soy or coconut milk. Actually I have an unopened carton of rice milk in the fridge (never tried rice milk before) - and I have skim milk and I have soy milk - how about if I do a taste test for you when I've finished my emails and report back??? I'm told that as a little kid I drank goat's milk all one long summer on holiday (I remember the goat - she was sweetly pretty with a lovely disposition and her name was, of course, Nanny) - but when I returned to town and only cow's milk was available (and bloody little of that in wartime England!) I complained that cow's milk had too strong a taste (this part I do not remember). Go figure. I am used to soy now - but for cooking or with food, since I don't 'drink' milk out of a glass - so cow's milk tastes 'strong' and well kinda animal-y. I confess I haven't done the taste test with skim, soy, and rice I said I would do yesterday - believe it or not my dh saw me lining things up in the kitchen and said, in effect, Hey hon let's go out for a while and he took me to the, you guessed it, wine bar. *Much* more fun - haven't done that in ages! I think he's psychic *LOL* *But* I have to say that soymilk doesn't quite taste 'right' (to me) for savoury white sauces unless I load with cheese substitute or other masking flavour. This is a problem, since, as I've said above, I am an ovo-lacto veggie who no longer likes the taste of cow's milk. Siggghhhh. Of course the skim milk that I drink does have SOME flavor but in comparison to whole milk and plain (hock-tooo-ieee) soy milk, there aint much flavor. I think I'll try the rice milk next time....rice is pretty plain but I wonder if they add anything to it....definitely make sure they don't add that caleelgern *sp thickener stuff to it. Just checked (wouldn't you know that I didn't check before!): my soy milk has that carrageenan thickener in it, but not the rice milk - which, btw, by taste test I prefer. My husband agrees. The soy milk also has a whole bunch of vitamins and minerals added, the rice milk not. Both are organic. Because of the lack of the thickener, if you prefer skim cow's milk, I'd go for the rice milk - but perhaps brands differ? Mine is Rice Dream, the soy is President's Choice. Since I use it for cooking and don't need them to add all those vitamins and minerals (we get all that stuff in the rest of what we eat), and since I don't like the thickener, I'll go for the rice milk. It *looks* more like cow's milk anyway, so will give a nice pale colour to a sauce if it's the kind of thing that would look silly dressed in beige ;=) and is not tinted by other ingredients.
