Guest guest Posted June 14, 2003 Report Share Posted June 14, 2003 I had something like this for lunch at a restaurant early this week, and I thought it was pretty good, but needed some improvements. So I whipped this up for a potluck today. This recipe makes a TON (it is for a pot luck, after all), but can be reduced to a manageable size pretty easily. Black Bean and Quinoa Salad 4 15 OZ cans organic black beans 1 cup uncooked quinoa (or 1/2 cup quinoa, 1/2 cup millet) 1/2 large red onion, diced 1/2 yellow bell pepper, diced 1/2 red bell pepper, diced 1/2 green or orange bell pepper, diced 4 Roma tomatos, diced 1/2 cup fresh cilantro, finely chopped 1 cup green onion (white and green parts), thinly sliced 1/2 cup balsamic vinegar 1 cup extra virgin olive oil 1/2 cup water 1 Tbs turbinado sugar Sea Salt to taste, approximately 1 tsp. To cook quinoa, rinse the quinoa well in a strainer and stir it into plenty of boiling water. Return to boil, reduce heat to medium and cook for 15 minutes, covered. Drain through a strainer and rinse in cold water. Leave the grain in the strainer. Bring an inch or two of water to boil and set the strainer over the pot (make sure the strainer does not touch the water in the pot) to steam until tender and fluffy but not sticky, approximately 15 minutes. Remove from heat and allow to cool. For the dressing, combine the vinegar, olive oil, water, sugar and salt and whisk well. Combine the beans, quinoa and vegetables in a large bowl and stir well. I've heard of it but never knew what it was. I put this nummy recipe in our files section.
