Guest guest Posted June 17, 2003 Report Share Posted June 17, 2003 PT's post about salt potatoes reminded me of this recipe that gets raves on a slowcooker mailing list that I read. I'm not a big potato eater, but everyone who makes these seems to rave about them, so I thought I'd share it. Salt Baked Potatoes (like you get in a steak restaurant) Baking Potatoes oil or vegetable spray Seasoning Salt of your choice Large bag of Kosher Salt (or pickling salt) Scrub potatoes well, prick, rub with oil or spray with veggie spray. Generously sprinkle with Seasoning Salt all over. Put about an inch depth of salt into your cooker, lay potatoes on salt, pour remainder of bag of salt over top so the potatoes are evenly covered. (I layered mine in the crockpot with salt in between the layers.) Cook for 2 to 2.5 hours on high. Turn off cooker and potatoes will keep warm until you are ready to serve. Break salt cap, lift out potatoes, shake off excess salt and serve. Cool your salt down then store it in a large glass jar with a tight fitting lid...... you can reuse your salt up to a max. of 10 times.
