I know I've been a chatterbox today, but I remembered that a while back I

promised to post some quick recipe ideas I found in a book. Here goes:

 

 

SUPERFAST, ON-THE-RUN DINNERS

 

Try to keep a container of cooked grain (rice, millet, quinO?) in the

fridge, cans of beans in the pantry, and frozen vegetables in the freezer.

In minutes flat, you can scoop rice onto a plate, plop some black beans and

broccoli on top and throw the whole thing in a microwave to heat.

 

Cooked pasta is another good thing to stash in the refrigerator. Top noodles

with bottled sauce, frozen beas, or broccoli and maybe a few chickpeas or a

pinch of cheese. Microwave until heated.

 

Toss a potato into the microwave (pierce it with a fork first) and heat on

high for about 8 to 10 minutes. Top with canned vegetarian chili or baked

beans.

 

This one takes a little longer, but it's still fast (about 30 minutes). Top

a premade pizza crust with ready-made pizza sauce and lots of vegetables:

sliced zucchini, mushrooms, or frozen broccoli. Top with cheese if you'd

like, but with enough vegetables you don't really need it.

PITA FILLINGS

 

Tofu Salad: Crumble tofu, stir in a finely chopped green pepper, green

onions, carrots, a touch of curry powder, salt, and pepper (and a drop of

olive oil if it seems dry).

 

Hummus: Top this chickpea dip with cucumbers, lettuce, and tomato.

 

Snazzy Salad: Start with a bed of greens and thinly sliced vegetables,

sprinkle with cheese or cooked kidney beans, drizzle with low-oil dressing.

 

Bean Salad: Combine your favorite cooked beans with chopped green pepper,

onion, or other vegetable. Add dressing, salt, and pepper. Top with tomato.

 

Bean Spread: Mash up your favorite canned beans with seasonings. Use relish

with baked beans, dill and soy mayonnaise with white beans, and salsa with

pinto or black beans.

 

 

OTHER CREATIVE SANDWICH SNACKS

 

Light Cheese Spread: Combine low-fat cottage or ricotta cheese with finely

chopped red pepper, celery, and spices; spread on thick slices of bread.

 

PB & Bagel: Mix together peanut butter (or other nut butter) and honey. Add

mashed banana, if you please. Eat on a cinnamon-raise or banana-nut bagel.

 

Tomato & Basil: Top a bagel or crusty bread with soy mayonnaise and a touch

of chopped fresh basil. Add a thick slice of ripe tomato.

 

Presto Pasta Salad: Cold pasta salad makes a filling lunch that you can pack

in a reuseable container <snip> Toss cooked pasta spirals with chopped red

bell pepper, black olives, onions, broccoli pieces, and green peas (or just

use a frozen vegetable mix). Add premade, oil-free Italian dressing. Toss in

cheese cubes, if you like, and sprinkle with salt and pepper.

 

Burrito Roll-Up: When you have burritos for dinner, make an extra and

refrigerate it for tomorrow's lunch. <snip>

 

Veggie Burgers (or Dogs): <snip>

 

Freeze-A-Yogurt: Freeze the container overnight and pack it in your lunch

bag (wrap it in a towel to absorb the moisture). <snip>

I still can't figure out why they pull the fastest operators away from

keying and try to teach them Microsoft Office. I'd settle for a pat on the

back and a raise *GRIN*
