Guest guest Posted October 28, 2002 Report Share Posted October 28, 2002 <This is the first cake I've made that didn't have a fudgey bit in the middle.> Hi, all I've been with this group for about a month, my younger son is celiac, and also has allergies to dairy and corn (and pollen and dust mites...sigh), and none of us eat red meat, pork, or dairy. We are not vegan, but I find this group very helpful. I just wanted to comment that to make a cake without the " fudginess " in the middle, there's a surefire way: a convection oven and/or stoneware. Secondly, for those of you who tolerate soy, I bought some cheese from this website in California (www.imearthkind.com) and it is vegan and melts. The mozzarella is awesome! The nacho is good on chips, but I wouldn't recommend it plain/sliced. It is very expensive, but a nice treat. Thirdly, I saw a recipe on here for macaroni and cheese, and I have to say that no recipe I have made tastes as good as the Road's End Organics gluten-free chreese, and it is only 99¢ a packet, and then I am able to mix it with flax oil for added nutrition. Also, it is soy-free. I know for busy moms like me, prepared foods are always helpful. And lastly, my whole family LOVES pesto, and I make it the traditional way but just exclude the cheese - it is just as delicious! And again, I use olive oil but also add flax oil. We grow a LOT of basil in the summer, chop it all down and I make enough pesto to last through the winter, even with holiday parties where it is always a hit. A food processor is a must here, though.
