Really made me want to whip up a banch ... Alas, can anyone recommend a decent vegan egg substitute for eating plain (like scrambled eggs)? This recipe will horify the most veggie among us, but I have yet to find anything in my life that matches the happy memories of my mom's " scrambled yeggies " on a cold winter morning. (I couldn't, for some reason, say eggs.) I didn't substitute anything in this recipe, because if you're going go ahead and eat badly, just do it 100%, right? Heat frying pan over medium heat. Once warm, remove from heat and drop in a healthy dollop (or unhealthy!) of butter. Swirl around bottom of pan to coat. Crack in two large eggs and scramble using fork tines, mixing the yellow goopy bits up with the butter and white gel. Add a large splash of milk, again mixing well. Color should be a light light yellowish white. Bring pot back to heat, reduced to low-medium. Using a serrated spoon, stir slowly until eggs begin to thicken. Before all liquid dries up, remove from heat and transfer to plate. Serve with white, buttered toast, which can be used to sop up the " egg juice. " I always added a dash or two of salt and a smidge of pepper. I wouldn't dream of eating that too often, but every once in a while hasn't hurt my cholesterol counts. Good troll genes.
