veggie pepperoni recipe request

Hi Irene. I will dig around in my many vegetarian

cookbooks here at home to see if one of them

has a recipe for a vegetarian pepperoni that is

lower in sodium than the market brands. BTW,

what is the sodium content of the ones you have seen?

I hate to say this, but pepperoni not matter what is going to be

loaded with salt, or flat tasting....i have seen veggy pepperoni in

the market by Yves, or is it light life. I have trouble with

remembering names, I do lables. For some reason when ever I enter a

suppermarket my brain slips into stupid mode and I end up circling

the planet Uranus untit I leave the store!

both yves and smartlife/lightlife make veggie pepporoni. i don't

recall the sodium, but i think they both taste pretty good and are

vegan. also boca makes a rising crust frozen pizza with fake

pepporoni already on, but they use real cheese. i think jim is

right. the saltiness is part of what is appealing about most meat

products. you can get sodium free salt, but it tastes so awful.

maybe it's an acquired taste.

Irene Marie, I searched the web and everything...where the heck is this

recipe. I even broke out this book of mine which is a lot more wonderful

than I had once thought....so thanks for leading me to it anyway. I figured

there would be a pepperoni recipe in here for sure, but there seems to be

everything but. There are gluten recipes for

UN-beef,pork,chicken,ham,turkey,seafood,bacon....well you get the picture.

If any of those are of interest than I'll try to type it up for you when I

get a chance. I don't know about the low-sodium part though. There are

recipes for making rice, soy, almond milk etc....tofu sour creams, cream

cheese, ricotta, un-parmesans, etc. Ok, i'm out, latez.

PS...Oh Dave (Daves4Sale), can you please tell me about this sodium-less

salt and how does it taste, besides bad???

Hello Jim ;

 

I have bought the product named Yves.

 

As for the salt content, if I was able to make my own, I can add more of the

other non sodium spices to beef it up more.

 

I also buy a brand called Vegie for the cheese.

 

If I had a recipe, I'd be able to omitt the salt and add what I wish to it.

Now you know what all that I've been finding on loads of veg. websites etc....

 

Not having any salt in your food, isn't all as bad as most people think that it

is.

When I cook, I've always enjoyed making my foods/dishes quite flavourful, by

using herbs and spices, never loaded down on the salt.

 

I like to be able to taste the food, not have it disguised with loads of salt or

salted seasonings etc...

 

I use my herbs and spices to compliment the taste, never over do it.

 

Otherwise, what is the point of making something , if you don't get to enjoy the

true natural flavour of it.

 

Anyhow, that's just me.

hey shawn, the sodiumless salt is made with potassium. Lots of brands

make it, one of them is " Nusalt " . My gf was using it to get more

potassium. It just tastes really acrid- kind of reminds me of those

sour ball candies. I only tasted it plain, maybe mixed in food it's

not as bad. if you're looking to just lower sodium, i'd recommend

mrs. dash, that stuff tastes pretty good from what I remember.

Well I'm glad someone got a good laugh out of my post. I will check

my cookbooks I think I saw a recipe for soy sausage in one of them.

Basicly if you add a little faux beef/chicken/pork flavoring and the

spices to tofu or TVP you should get something similar to the sausage

you want. I want to try this with hot dogs in my imaginary spare time

down the road. On another note of the salt thing. I just got

diagnosed with low blood pressure 64 over 46 with a heart rate of 55

due to a lack of salt in my diet. My doctor told me to add some salt

to my diet, and I have been fine so far. Salt is not a bad thing in

moderation :)

Your recipe for soy sausage sounds interesting, if you should happen to have the

time to post it, would you be able to do so?

 

As for the salt , I'm salt sensitive. Allergic to table salts

 

Yes, we do need salt

 

But, what I mean by no salt for me, is table salt.

 

Those are 2 different things.

 

Also, foods , natural foods do contain their own natural sodium in them

 

Like for example, tomatoes have salt in them, naturally.

 

Just like celery etc....

 

I can have sea salt in moderation, because that's not same as table salt that

everyone uses .

 

But, I don't really use it all that much.
