Guest guest Posted August 20, 2003 Report Share Posted August 20, 2003 When I went vegan I had to do a lot more cooking for myself. That wasn't so bad, I like cooking. But what kinda sucked was that I was only cooking for myself. Most of the recipes I found made way more servings than I could eat. So I had to kind of tweak with different recipes to make them less servings or just prepare recipes and store them to eat later, which worked out alright. I also don't use any white sugar (in the U.S. it's usually processed with bone char) and I use any other processed foods, such as white flour, very sparingly. So I had to do a lot of experimenting with that too. Which usually didn't turn out too well at first, lol. But anwyways, here are a couple really easy recipes that I like to use a lot. *Pancakes* 1 1/4 cups flour (I usually use 3/4 wheat flour and 1/2 white) 2 T sugar (I use raw sugar) 2 T baking powder 1 1/2 cups water Mix, cook, aaaand enjoy *Chocolate Pudding* (I loooove this recipe being the chocolate freek that I am, and it's really simple) 1 pack silken firm tofu , crumbled 2/3 cup raw sugar 1/2 cup unsweetened cocoa powder 2 1/2 t. vanilla extract pinch of salt (I use sea salt, don't like the processed salt) I use a blender to mix it until it's smooth, then let it set in the refridgerator for about 15 minutes or so. Guest guest Posted August 21, 2003 Report Share Posted August 21, 2003 as a vegan, i do quite a bit of cooking myself, and because of my nutty hours (6am to 10pm with a few hours break in between), i have become the master of the 10-minute meal. things i have found very useful to keep handy at all times are: -tofu, all styles -veggie ground round -frozen veggies -canned tomatoes -canned fat-free refried beans, preferably black beans -canned beans of many types -frozen fruit -soy milk -veganrella or follow your heart's vegan cheeze -sprouted whole grain tortillas (i avoid processed grains whenever possible) -for emergencies, the following prepared frozen foods: --vegan " chicken " nuggets/patties (health is wealth makes good ones) --vegan " chicken " wings (health is wealth again) --veggie munchies (health is wealth... boy they make a lot of good products ) --celentano vegan dinners you'd be amazed at what you can do in a jiffy with those ingredients. veggie burritos, stir frys, grilled/barbequed tofu, and so on. yum. my kitchen always has a TON of spices on hand, as well as nutritional yeast. i've posted this link in the past, but i often order from the dixie diner's club (www.dixiediner.com). they have lots of good, healthy vegan meal mixes that you can make in a hurry; they have lots of recipes to go with their foods as well. some of the foods are great (particularly their chocolate desserts and cheeze sauce products), and some are not-so-good. you just have to mix and match to see what works for you. melody http://www.melodysmusic.net Quote Link to comment Share on other sites More sharing options...

It still has some kind of dairy ingredient in it. What is a brand name of a vegan cheese that anybody uses? I might be able to ask my local healthfood store to start carrying it. The healthfood store that I go to has been good at trying to order other products if I ask for them.
