Guest guest Posted August 27, 2003 Report Share Posted August 27, 2003 hello, I been wanting my mom to buy some collard greens so I can make them adding a few drops of wrights liquid smoke which btw we used to make tofu jerky;however, she thinks the idea of cooking collard greens with the liquid smoke is totally disgusting. Guest guest Posted August 28, 2003 Report Share Posted August 28, 2003 I'm new here, so the recipe for tofu jerky is new to me, but it sounds wonderful.. Please share. Collard greens are great too. My ex-husband who is from the south used to take collard greens along with mustard and turnip greens (2 bunches of each) and clean them well, removing the hard stems/stalks and washing off any sand/dirt. He would then slice up a jalapeno pepper (there's your kick). He would fry a bit of salt pork and add that for flavor and the oil, but I realize that doesn't fit in with a strictly vegetarian diet, so the liquid smoke and a couple of Tbsp. of vegetable oil sound like a good idea. The only water is the water left on the leaves from cleaning them. Keep an eye on them. they cook very quickly and cook down a lot. From what I understand, in the south they use bacon, ham or some other seriously smoked meat to add flavor to collard greens, so using liquid smoke would give them that flavor without the animal death. I have successfully used liquid smoke in recipes to lend a touch of smokey flavor and it works fine.
