Guest guest Posted September 3, 2003 Report Share Posted September 3, 2003 I got this recipe from a friend who made it at our vegetarian club meeting for everyone, then i have actually made it at home. Vegan Shepherd's Pie 2 lbs Yves Veggie Ground Round 1 28oz can Diced Tomatoes Red,yellow and orange peppers 1 sweet Vidalia green onion spices to taste 1-2 pounds of frozen vegetables 5 pounds mashed potatoes. Prepare first 5 ingredients ina skillet. At the same time, steam the vegetables and prepare mashed potatoes. Pour the ground round mixture into the bottom of a 9x13 pan, put the veggies on top as the middle layer, then spoon the potatoes on top covering the veggies. Bake 30 minutes at 300 degrees. When she made this, she did not bake it, so it's just as good not baked. When I made it one time, since I still eat cheese, I put cheese and margarine in the mashed potatoes. I used frozen mixed corn, beans and carrots and I just used a regular onion and a green pepper. Of course, I also did not measure anything! I think I just used one package of Yves veggie ground round whatever size it was! How many servings would you estimate it makes? Seems like alot with 5lbs of taters and 2 pkgs of Yves, but she was cooking for a potluck thingie, so I can adjust it down a bit. When I made it using just one package of veggie ground round, it filled up probably a 10 inch round casserole dish. I served it to me, my brother and sister in law and we had like 1/2 or more leftover! SO, I would estimate 5 or 6 people for sure. I don't even know how many pounds of potatoes I used. I think they have Italian and Mexican flavors and they are definitely good in there! Someone suggested to me that you could even use tator tots on the top instead of mashed potatoes.
