Guest guest Posted September 16, 2003 Report Share Posted September 16, 2003 Tonight I had a baked potato and a salad, but I fixed this nice vegan gravy with mushrooms to put on the potato; quite yummy. I didn't use a recipe, but cooked about 6 large sliced shrooms in a bit of vegan margarine, then added a cup of veggie broth and a teaspoon of dried onion soup mix. I let this all simmer covered for a while, added some flour mixed with water and a bit of cornstarch to thicken it before serving, then seasoned with salt and pepper. (((thanks for that))) Last night, I prepared Joanne Stepaniak's recipe for (seitan) " Ribs " The recipe is in her book, " Vegan Vittles " The seitan was simple to make by mixing vital wheat gluten with nutritional yeast, and a bit of onion powder and garlic powder - then, mixed water + lite soy sauce into the dry ingredients.... (I know I'm supposed to avoid soy products [because I'm hypothyroid], but a teensy bit here and there is one of my guilty pleasure, I guess...lol) Gonna serve the ribs again, tonight, with potatoes (with melted almond cheese) and broccoli salad. Fruit for dessert. Also made the " Tofu Bacon " from the same book last week - it was delicious! Thanks for posting about what you made for dinner, too. I saw at our local Chinese restaurant that they offer a gluten-veggie dish, and I suppose that is actually seitan but they listed it in their menu as gluten maybe b/c folks might not know what seitan is. (?) *lol* Somehow I don't think gluten chunks sounds as appetizing as seitan chunks! I have got to get some of Joanne Stepaniak's cookbooks, she sounds like a vegan who really knows her stuff.
