Guest guest Posted September 19, 2003 Report Share Posted September 19, 2003 Pumpkin Bars Yields 12 pieces. 3/4 cup flour 3/4 teaspoon salt 1/2 teaspoon baking soda 1/2 teaspoon nutmeg 1/2 teaspoon cinnamon 2 eggs 1 cup brown sugar 2/3 cup canned pumpkin or make your own 1/4 cup cooking oil 1/2 cup nuts In a bowl beat eggs and sugar. Add oil and mix until combined. Then add the dry sifted ingredients together with the pumpkin and nuts. Pour in 1/4 sheet (13 " x 9 " ) greased baking pan. Bake at 350 degrees for 30 minutes. It should come out just fine. You might even be able to get away with using applesauce for the oil and the eggs; then they would be really healthy. I have always found that the apple flavor lends itself well to recipes containing pumpkin.
