Pumpkin Bars (Recipe)

Pumpkin Bars

Yields 12 pieces.

 

3/4 cup flour

3/4 teaspoon salt

1/2 teaspoon baking soda

1/2 teaspoon nutmeg

1/2 teaspoon cinnamon

2 eggs

1 cup brown sugar

2/3 cup canned pumpkin or make your own

1/4 cup cooking oil

1/2 cup nuts

 

In a bowl beat eggs and sugar. Add oil and mix until combined. Then add

the dry sifted ingredients together with the pumpkin and nuts. Pour in

1/4 sheet (13 " x 9 " ) greased baking pan.

 

Bake at 350 degrees for 30 minutes. Cool 5 minutes. Remove from pan and

frost, if desired. Cut into 2 " x 4 " squares.

Having just read the ingredients and all I don't see

any reason why an egg replacer couldn't be used.

It should come out just fine. You might even be able to

get away with using applesauce for the oil and the eggs;

then they would be really healthy.

I have always found that the apple flavor lends itself well

to recipes containing pumpkin.

 

Just my 2 cents.
