Guest guest Posted September 22, 2003 Report Share Posted September 22, 2003 Niccii, Joanne Stepaniak has a recipe for vegan Worcestershire sauce, among other sauces, in 2 of her books: Vegan Vittles and Ecological Cooking (which is co-authored by Kathy Hecker. If you do a search for vegan sauce recipes online, I'm willing to bet that thousands of web sites will come up, too... I'm fortunate to have two asian markets - one a HUGE supermarket, to rival the size and selection of Wegman's (a huge supermarket with many imported and organic foods)!!! If no Asian market is located in your area, there are some online shops that do mail order. I'm not sure which you may want to try, but also Morningside Farm has a lot of vegan sauces and foods. I get my nut butters and lots of other foods from them, via UPS delivery - - - Morningside Farm (it says " buying club " but anyone can order and you do NOT have to join anything http://www.morningsidefarm.com/ I know that " seitan " (the Japanese name for gluten meat substitute) is sold frozen as Mi-Tan and other names, and is called " kofu " in Chinese. I didn't scour the freezer sections of the Hong Kong Supermarket (yet but I found ready to use wheat gluten in jars - some just in soy type sauce and others in peanut sauce (ie: soy and whole peanuts plus seasonings). *ALSO* - I found small cans of " Mock Duck " , " Mock Ham " , etc. which are mostly seitan-based (the " mock duck " and " meat for spaghetti " I bought do not contain soy protein, and that is what I looked for)... I got these things to put in my pantry for those days when I either run out of vital wheat gluten (and, then, can't make homemade seitan) or if I'm low on pantry items or can't get to the store - - - I can always steam or stir fry some veggies with ginger and broth and sesame oil, then mix in the prepared gluten proteins and serve over rice, noodles, or even toast Yesterday, I bought (mushroom-flavored) vegetarian oyster sauce (brand is Wan Ja Shan) and Vegetarian Hoisin (brand is Lee Kum Kee). I bought some jars of cabbage in chili oil, to use as a condiment or in some recipes I might try. Also, bought tiny sheets of bean curd skin (wanted to try a vegan (seitan) turkey with yuba/bean curd skin from a recipe I found online: http://www.vegsource.com/articles/bryanna_xmas.htm BUT, being such a novice (*blush*), I got tiny sheets - the size of an egg roll after wrapping....BUT, maybe I can make vegan seitan drumsticks out of that! (LOL!?) I re-read the recipe later (of course...lol), and found that BIG SHEETS of yuba or bean curd skin are often found in the freezer section.....you can bet I will bring a cooler along next time, and pay a lot of attention to the frozen foods! My son and husband got their fav snacks at the market: sweet potato chips, seed/nut/honey bars, and " salad crackers " (large, very crunchy and flat rice cakes that are drizzled with a very teeny amount of salt and sugar mixture). My fav is glutinous rice cakes filled with red beans. Tere is a bakery within the supermarket, and the market is actually within an Asian Mall - with a cosmetics shop, a Zen music store, a point-pressure therapist (forgot the term, sorry a video rental shop (I love Hong Kong movies, but it is a 30 minute drive each way, so not that convenient for me to rent videos), and there was a book shop, but it closed...
