Guest guest Posted October 7, 2003 Report Share Posted October 7, 2003 Since I'm still trying to convince the rest of my household (DH and 8 yo DD and 10.5 yo DS) to " head towards veggie, " my menus aren't too creative. Pinto beans are always a popular choice here and, since I worked all day, that's supper for tonight. Pintos, tortillas, and grated cheese for those who do dairy. Salad veggies round out the evening's festivities. All easy enough to get done and still get the kids to tae kwon do in plenty of time ... Paula J. Udon Noodles with Sweet Basil Sauce 8 oz.udon noodles,cooked and cooled 1/4 cup tahini* 2-3 tablespoons Sweet White Miso 2 ablespoons lemon juice or cider vinegar 1/2 cup fresh basil,sliced thin or ½teaspoon dried basil 1/2 cup water 1 tomato,diced (in season) In small saucepan blend tahini,miso,water,and lemon juice.Heat over low .ame for 7-10 minutes.Add basil.Toss with pasta just be- fore serving. Can you tell from my questions that I grew up in the north? *lol* Your dinner sounds good to me though.
