Marinating

Can someone answer this for me? I am converting a beef dish to

vegetarian, and am going to replace the beef with tofu. The original

recipe calls for marinating the beef for about an hour. Does this

apply to tufo as well or should I marinate (marinade?) for more or

less time?

Marinate less time. In my experience much less. Tofu absorbs marinade fairly quickly and especially if the marinade was created for meat you want to watch out for over-marinating.

Ok, I'm kinda new to the whole vegetarian thing (and this list), and although I've been cooking for some time, I've never gotten the hang of marinating. Just never really did it that much. So I guess the concept of "over-marinating" doesn't make sense to me; what happens? Would that get "too much" flavor or too strong a flavor into the tofu? Or is it just something I have to do to find out for myself?

Peace,

According to the guy on " Good Eats " you should always

marinate the firm tofu. What he says you need to do

is get some of the liquid in the tofu out so when you

marinate it soaks up the marinade.

Exactly, over-marinating tofu will result in a flavor that is too strong. This mostly applies to marinade recipes that were designed for meat which rely on potent spices and a lot of salt to not only flavor but tenderize the meat. Tofu obviously doesn't need that. Here's how I have gotten the liquid out: take a couple dishtowels - the

white cotton kind with no loops or lint and wrap the block of tofu up. Set

it on a plate, then put something heavy on top for a while. If you don't

have a lot of time, just press it with your hands... then marinate it like

it says for the beef...

 

On a side note, we do this with Asian foods. Marinade the tofu in sesame

oil. It is soooo good, you could eat it plain! Even my dh who doesn't like

tofu much really likes it this way. Then, stirfry, or roll it up in a sushi

roll with some rice and asparagus, cucumber or carrots. YUM!

I haven't made the shift to vegetarian yet. With the

family well entrenched in eating meat {my SO's mantra

is Vegetarian = Bad Hunter}, what I am doing is making

one meatless meal per week. As I learn more I will

probably end up making 2 dinners. One for the family

one for me. What has prompted my looking into this as

a life choice is slowly becoming aware of what I am

eating and what has to happen for me to eat a meat

diet. What are the financial costs of tofu compared to

beef or chicken. Is tofu more expensive? Anything

off of the norm in society is bound to be a " specialty

item " therefore more expensive in my experience.

Besides eating tofu you can use it for a variety of other uses, which make

it more valuable than a slice of beef.

 

1. Use it as a coaster for your beer.

 

2. Use it to jack up your car to change the oil. Then cut into squares and

saute on the exhaust manifold. Sprinkle with grit and toss with

transmission fluid.

 

3. I have and recommend a tofu mattress, very ergonamic.

 

4. Bury your kids in it for afternoon fun.

 

5. Nothing says I love you like tofu. your wife will love you.

 

6. Make tofu not war.

 

7. Sprinkle baking soda on it and puree for a great organic substitute to

Store bought toothpaste.

 

8. Mix it with flour and spackle the cracks in your drywall.

 

9. Mix it with food coloring and a little sugar, blen and poof! Edible

body paint...Once again your wife will love you. :x

 

10. Tie a ribbon around it and eliminate the long waits in the stores at

the mall.
