Meatless Meatloaf?

I have a recipe for Veggie Meatballs using Yves Veggie Ground Round, from

The Good Cook Book by Yves. You could try converting it to a loaf.

 

1 pkg Veggie Ground Round

1 egg white

1/4 cup wheat gluten

2 tbsp breadcrumbs

2 tsp prepared mustard

2 tsp worcestershire sauce

1/4 tsp basil

1/4 tsp thyme

1/4 tsp oregano

1/4 tsp salt

 

Preheat oven to 350F.

In electric mixer using paddle on medium speed, or with food processor or

potato masher, mix all ingredients together for 2 minutes or until well

mixed.

Place 2 tbsp of mixture into palm of hand and roll to form round ball.

Place on lightly oiled baking sheet. Continue rolling til mixture is used

up.

Bake for 20 minutes.

 

Makes 12-18 meatballs.

If you bought Yves, it couldn't be easier to use. Use it in any recipe that

calls for ground meat. I would cut back on the bread and add more veggies. I

have one we like alot but i can't post it here.
