Guest guest Posted January 15, 2002 Report Share Posted January 15, 2002 I have a recipe for Veggie Meatballs using Yves Veggie Ground Round, from The Good Cook Book by Yves. You could try converting it to a loaf. 1 pkg Veggie Ground Round 1 egg white 1/4 cup wheat gluten 2 tbsp breadcrumbs 2 tsp prepared mustard 2 tsp worcestershire sauce 1/4 tsp basil 1/4 tsp thyme 1/4 tsp oregano 1/4 tsp salt Preheat oven to 350F. In electric mixer using paddle on medium speed, or with food processor or potato masher, mix all ingredients together for 2 minutes or until well mixed. Place 2 tbsp of mixture into palm of hand and roll to form round ball. Place on lightly oiled baking sheet. Continue rolling til mixture is used up. Bake for 20 minutes. I would cut back on the bread and add more veggies.
