question on cheese

Megan-

as far as I know, rennet is an enzyme that comes from

the inner lining of a calf's stomach. There are

certain co-ops that produce cheese free of all

enzymes, such as (i believe they are called) Pine

Valley (or maybe it's Pine River Valley) and they

usually label their product as rennet free.

There are vegetable rennets, but I'm not really sure how one would know the

difference unless the cheese says so.

okay, one of my new year's resolutions was to take a closer look at the list of ingredients in a product to avoid animal-based products.

 

My dilemma: I love cheese. I've been on the lookout for ingredients like rennet, but many of the ingredients in cheese don't specifically list rennet or casein. They simply say "enzymes". Would rennet be considered a cheese enzyme?
