I made a sausage stew with fettucini and I couldn't stop eating it! I have been a vegetarian for about 25 years now and have devised a zillion ways to cook without meat. This stew used Boca Italian Sausage. I've never tasted actual " meat " Italian sausage, so I have to assume this stuff tastes like the real thing. It sure was good though! And I'll bet it tastes even better the second day! It isn't a real quick one... Takes a little time...like an hour to cook. Gloria Italian Sausage Stew 4 Boca Italian Sausages, sliced 1/2 tsp. dried basil 1 clove garlic minced 1/2 tsp. dried oregano 1 small onion 1/2 lb. fettucini, partially cooked 3/4 cup red wine 1 green pepper chopped 1 can whole tomatoes 3 tbsp. fresh chopped parsley 2 1/2 cups veg. broth or water (unsalted) salt and pepper to taste 2 or 3 veg. bouillon cubes In a large pot, cook sausage (in oil) over medium heat until brown. Remove and drain on paper towels. Cook garlic and onion in the same pot for 2-3 min. Stir in tomatoes, wine, broth, basil and oregano. Bring to a boil, then reduce heat and simmer uncovered 30 min. Str in zucchini, partally cooked fettucini, bell pepper, parsley, veg. cubes, and the sausage. Cook 25 min more. Add salt and pepper to taste. I have found the Boca sausages very tasty indeed including the Italian, hickory smoked, and bratwurst varieties! They can be used to add a bit of zest to pizza also! I saw this sausage thingie while I was looking up recipes for some new soups on the internet, a friend told me about the Boca ones, and I thought...I'll try using these instead of the meat kinda sausage it calls for, and hey! it worked!!! They have alot of sodium though they do not taste excessively salty. We especially enjoy them on PIZZA! Slice one up like pepperoni.
