I just wanted to say that I tried Gloria's Italian Sausage Stew tonight and loved it! Those Boca Italian Sausages might be salty but very tasty! Next time I think I'll only use 3 sausages instead of 4. Thanks Gloria for the recipe.

Here it is.

 

Italian Sausage Stew

 

4 Boca Italian Sausages, sliced 1/2 tsp. dried basil

1 clove garlic minced 1/2 tsp. dried

oregano

1 small onion 1/2 lb.

fettucini, partially cooked

3/4 cup red wine 1 green pepper

chopped

1 can whole tomatoes 3 tbsp. fresh chopped

parsley

2 1/2 cups veg. broth or water (unsalted) salt and pepper to taste

2 or 3 veg. bouillon cubes

 

In a large pot, cook sausage (in oil) over medium heat until brown. Remove

and drain on paper towels.

 

Cook garlic and onion in the same pot for 2-3 min. Stir in tomatoes, wine,

broth, basil and oregano. Bring to a boil, then reduce heat and simmer

uncovered 30 min.

 

Stir in zucchini, partially cooked fettucini, bell pepper, parsley, veg.

cubes, and the sausage. Cook 25 min more. Add salt and pepper to taste.

How much zucchini is used in this recipe? I don't see it listed in the

ingredients.

Jo, did anyone ever answer this question for you? If not, I just used one medium zucchini and it seemed fine.
