Guest guest Posted May 30, 2002 Report Share Posted May 30, 2002 I'm trying to _slowly_ start changing at least our lunch menus to vegetarian meals and I'm drawing blanks on ideas. I homeschool and work nights so most of the time my 16 dd makes lunch so I need ideas that will appeal to picky teens as well as be easy for the kids to fix. Any ideas? Mac & Cheese, Steamed veggies Baked potatoes, Fried Potatoes, Mexican dishes (burritos, guacamole, nachos, etc.) Red beans & rice with a zippy sauce. Cottage cheese with tiny bits of diced onion. By all means salads with different greens and maybe some sunflower seeds for crunch! Good old PB & J. Protein shakes made with fruit. Well, hubby is home so gotta run, but good luck! Guest guest Posted May 30, 2002 Report Share Posted May 30, 2002 I send my hubby off with a sandwich - veggie turkey and veggie cheese with lettuce, tomato, pickle, nayonnaise and mustard with fruit, 2 bottles of water and a ginger ale every day. Thanks - Tammy If your group likes egg salad, you can make a version with tofu that I swear tastes so close to the original you can't tell the difference. Just get soft tofu, drain it well, pressing between paper towels to get out all the moisture. Break it up with a fork, back of spoon, your hands, whatever and then make it like you would ordinarily make egg salad. I add minced onion, finely chopped scallion and a little fresh dill.
