My husband adds salsa and some cheese to his. I'll put canned mushrooms on and some shredded carrots in it. Guest guest Posted June 30, 2002 Report Share Posted June 30, 2002 I use flour tortillas a lot. I brown them on my gas stove burner to give them flavor. Then you can wrap just about anything in them. One of my favorites is cheese & black olives. Sometimes I add onion and/or mustard to that & just heat in the microwave. You can put veggies & cheese, or avocado, tomato & cheese. There are tons of possibilities. Season with garlic, and italian seasonings of your choice. Spread this on a Boboli crust. Top with baby spinach leaves (optional additions: capers, baby corn, Greek olives, sun dried tomatoes, feta cheese, fake pepperoni, wham). Just the spinach is fine if you're in a rush. Top with pizza cheese. Bake according to Boboli directions but pull out of over 2 minutes early, top with sliced tomatoes and return to the oven for two minutes. Yummy! CARROT AND RAISIN SALAD Grate carrots with automatic grater if you have one (I have one on my mixer and it's quick and easy). Add pineapple chunks (fresh is best). Dressing for salad: 1 part mayo $ 1 part flavored yogurt -- yumm! The fat-free stuff works out just dandy for this. See the recipe I sent in for Fab Soup yesterday, too. Quick, easy, filling and healthy. Peanut butter and jelly sandwiches on a good whole grain toast are still wonderful! I do lots of sandwiches. Big, thick tomato slices are wonderful in a sandwich with ranch dressing and baby spinach leaves. Yumm! Amy's brand makes some dandy little frozen spinach pockets, veggie pockets, etc. Brown rice, if you want to diet. Great stuff! You can make it with veggie broth, and sliced mushrooms. For the calories you get in one chocolate chip cookie, did you know you can eat SIX cups of brown rice? Or at least I heard that on the radio. Hope this helps! Use bolillo bread (portugese rolls) or another roll that is firm outside and softer, but not billowy, inside. Egg Fu Yung also reheats well, and I've eaten for both breakfast (just this morning actually) and lunch if you eat eggs. Muffins can be thrown in the freezer and I bring out a few at a time to thaw and stay in the fridge. Guest guest Posted July 1, 2002 Report Share Posted July 1, 2002 I do tons of freezer recipes. Breads -- muffins, sweet breads, veggie breads. Also remember a PBJ sandwich is a good bet. Add some fruit and you have a wonderful meal. Keep a bag of chopped veggies in the frig. Add those to lunches. Fix a few baked potatoes and keep. Things like that. My personal favorite. We make extra pizza and eat the leftovers for breakfast. My kids think they are getting away with murder...lol.
