It used to be easier, believe it or not, when I had a whole family here and was into cooking for them, but now that the kids are grown and gone I often feel totally uninspired about mealtimes. I posted a muesli recipe somewhere and go for oatmeal with ground flax and maple when in a hurry. I like fruit salad and berry jams with whole grain toast in warm weather, but sometimes go for a hearty breakfast with tofu and my favorite mock sausage links or paddies. Tofu Scamble: Chop or break up tofu in frying pan season with salt, red pepper, garlic and onion pwdr... try nutritional yeast and turmeric (for color). add some chopped bell pepper and onion if desired... then turn up the heat to medium. I use olive oil as I cook my scramble and links and wa-lah - a hearty breakfast to accompany my toast & jam (or pancakes) with juice and coffee (yeah, my am vice) Sometimes I put salsa on top of my scramble... Makes me salivate thinking about it! I know sp's are good for me, but... my mouth says no. lol! However, your zucchini muffins sound really good, as does your egg burrito. I add a little Taco Seasoning to my eggs -- quick, easy and delicious! But I haven't rolled them in a burrito, and that sounds good.
