Does anyone else feel jealous at the number of veggie resturants available to eat at in Seattle. EVen in this miserable university town, there are only a couple of places that even offer tofu, and one is Thai and the other Indian.

Part of the reason Seattle offers so much vegetarian is due to the

very diverse population. There is a large international district,

there are many ethnic restaurants all over the greater Seattle

area. Also the overall population is younger here, there is an

emphasis on healthy lifestyles, and lots of people eat out often.

Even the seafood and/or steak places will accomodate veggies. I

tell them, " I am the token vegetaqrian " and they reel off the

options.

I lived in Pullman, WA (home to Washington State University) for

awhile before I learned that the Seventh Day Adventists had a

small,inexpensive, veggie place. Morgantown, WVA also had a small

hole-in-the-wall veggie place near the univ. The little places go

by word of mouth. Just offering this in case you are new to the

area where you are.

In the meantime we will save a place for you here.

Try living in the rural South. I ordered vegetarian stir fry and got it served to me with pork fried rice...lol. Our big vegetarian dish out on the town is pizza, bean burritos, a sub, or a veggie burger from BK.

And, genie, come on down to Houston when you need a good fix! Sure, it's

still beef country, but we have both the larger population AND the

international scene. And yeah, you *are* in about the meatiest of college

towns...

Having been been in several parts of the US

(including Texas and other southern states) I realize

that this would be a good time to open veggie

eateries - perhaps near a health food store... hint, hint!

Eugene, Oregon is full of veggie food - several large

healthfood stores, eateries, even the regular stores try

to compete. The movement is strong on the west

coast from San Diego to Vancouver, BC but would

happy to show y'all around when in my neck of the

woods :-) The University of Oregon brings young

veggies but the movement began with back-to-nature

and San Francisco hippie types in the late 60s. David

I've made several trips to Eugene the last couple of years (have kids there) and have to agree they have great veggie restaurants. I can't visit without having a spinach enchilada at Keystone. Yum Yum

My hubby originally wanted to run a restaurant many moons ago -- so a little while back I tried to convince him to help me open up a vegetarian lunch shop and a bakery on the side. The kind that would just serve light, simple dishes. He thought the bakery was a grand idea, but he's firmly convinced that the vegetarian dishes would have to be a sideline. Now he tells me when we're out of debt and the kids are older I can give it a try. I'd have to move to be closer to the nearest health food store. I don't want to give up my house in the country...lol.

David, you make me so homesick. I lived in Springfield for several

years. I was introduced to vegetarian foods while living there in

fact. While doing my shifts at the crisis clinic in Eugene, I would

go to the restaurant right around the corner (cant think of the name,

but it was in an old house), they had really good vegetarian soups

there. Oh the memories your bringing back lol. I may have to plan a

visit out there soon.

There are a few really good places here in the twin cities that have

vegetarian entrees, but most places just serve veggie burgers if we

are lucky. I must say it is improving though, especially in the

uptown area. I guess thats one good thing about having yuppies around

lol.

Becky, would love to visit over a spinach enchilada or

a mid morning breakfast. The food is consistantly

cheap and delicious though we will probably have a

Hi Caryl,

Send me an email at starcuts to give details

of your visit... I live by Amazon Park and like to take

walks there. Are you into day hikes? We could go for

the views if there's time. My hiking buddy (my 20 yo

son) left town 3 weeks ago and I'm gaining poundage!

I often get a " locals " tour whether traveling in the US,

Canada, or Europe... Hans sez " to travel is to live " and

I believe it... Anyone interested can email me for an

invite to world vegans when stuck in town... There are

many nations represented though a modest

population and no Native Americans yet! It is friendly

environment also.

I am glad that Alexandria and Autumn found the

group. I have questions about raw foods diet since I

think of the cold weather in NY... had a friend in the

Sierras get the chills or something while raw in winter.

I did read chapters of " Fit for Life " . I would describe

my self as a grain eater though... am hooked on good

mueli with rice milk and flax! :)lol

And Shara, have you considered opening a country

" bed and Breakfast " for vegetarians/vegans? You

could be listed in " Let Go " and " Lonely Planet " besides

Well the way things are going with us - there is a possibility that we

will be moving to Redmond to look for work... if we do - I will
