Mexican! This has worked out well for us. Get some

tortillas and lay out toppings and let folks make up their

own. Offer mashed beans (our substitute for refried),

seasoned hamburger substitute, salsa, hot peppers,

tomatoes, black olives, shredded lettuce and cheese, any

other topping you like.

 

Depending on the size of the group, I've also made

enchilladas (bean/cheese) and/or rice (with onions,

peppers, tomato sauce and/or canned diced tomatoes, chili

powder, wostershire sauce, or whatever you like)

 

Everything can be chopped or made up ahead of time. At

dinner time warm things that need to be warm, and put all

on some nice serving platters and there you go :)

I need something NEW to serve! Company (meat-eaters) is coming and I've served on previous visits quiche, veggie pasta, stuffed mushrooms and chicken-less pot pie. I really need a new idea, hopefully one that I can make ahead of time. Any suggestions for a person who seems BLANK?!

What about vegetarian lasagna? Grilled

vegetables?

 

I’m new to this group and I’m

enjoying the recipes posted here. These recipes are very valuable to me as I’m

converting to vegetarianism and learning how to cook at the same time. I’d

like t thank everybody in this group for contributing with great recipes.

I was thinking that grilled veggies might over cook after added to

lasagna... wouldn't it be better just to saute them in tamari and

seasonings for a while? If you do grill, maybe dip them with

nutritional yeast? Am just brainstorming here... David * - new pics

David,

 

I meant them as separate dishes. A dish of

veggie lasagna and/or a dish of grilled veggies.

mexican definately is a good one for meat-eaters...

 

if you need another try an indian theme, such as

curried veggies (such as: potatos, peas, carrots,

peppers, green beans) and basmati rice...

 

btw, what's your recipe for chickenless pot pie?

Thank you Giovanna, (love that name!), however; I've gone the veggie lasagna with this family already. The Mexican theme sounds good, that Kris suggested. I need to work on that, maybe some homemade salsas and guacamole dip and a salad of some sort.
