Guest guest Posted August 12, 2002 Report Share Posted August 12, 2002 Mexican! This has worked out well for us. Get some tortillas and lay out toppings and let folks make up their own. Offer mashed beans (our substitute for refried), seasoned hamburger substitute, salsa, hot peppers, tomatoes, black olives, shredded lettuce and cheese, any other topping you like. Depending on the size of the group, I've also made enchilladas (bean/cheese) and/or rice (with onions, peppers, tomato sauce and/or canned diced tomatoes, chili powder, wostershire sauce, or whatever you like) Everything can be chopped or made up ahead of time. Company (meat-eaters) is coming and I've served on previous visits quiche, veggie pasta, stuffed mushrooms and chicken-less pot pie. If you do grill, maybe dip them with nutritional yeast? Am just brainstorming here...
