Here's a recipe we really like. It smells and tastes like pizza but there's no bread and no meat. Actually I never use the can chilis, I use a tiny bit of fresh chili. My husband doesn't like food very hot. It does have to bake about an hour but it doesn't take long to put together.

1 cup evaporated skim milk

4 egg whites

3 tablespoons cornstarch

3 (4oz) cans whole green chiles

1/2 lb lowfat Jack cheese, grated

1/2 lbs. lowfat sharp Cheddar cheese, grated

8 oz. can tomato sauce

DIRECTIONS:

Preheat oven to 350 degress. Spray a deep 1 1/2 quart casserole dish with vegetable oil cooking spray. Beat evaporated milk, egg whites and cornstarch until smooth Split open chilies and rinse to remove seeds; drain on a paper towel. Mix cheeses together and reserve 1/2 cup for topping. Alternate layers of chiles, cheese and egg mixture in casserole dish. Pour tomato sauce over top layer and sprinkle with reserved cheese. Bake one hour or until done in the center.

Makes 8 servings at 225 calories and 10.0 grams of fat each.

I guess you don't know what is a VEGETARIAN recipe!

Milk, egg whites, and cheese are all animal products!

You need to look for a meat eaters email group!

Jack,

I don't think that was fair. Mary has submitted a VEGETARIAN recipe. This

group is called 'quick-vegetarian' not 'quick-vegan'.

Thanks, Mary, my family is going try that one this weekend.

I agree about the recipes, keep them coming. I know I am new to the list, haven't even said hi yet, but I have been eating what I would call a vegetarian diet, though not eating tons of chasse, eggs , etc, I do eat some.

By the way hi, my name is Phillip. I have lost 42 pounds since December 26th and have been eating a "vegetarian" diet since April 10th. I too feel great, have lost weight, back feels so much better. The kicker as mentioned in just a previous post, my allergies seem to have almost disappeared. Now I have no idea if this is a coincidence, but starting about a week ago every year I get horrible hay fever. This year I am really not experiencing any of this, though others in my family are! Anyways, nice to read the emails here and nice to have some support. I have taken to this eating lifestyle, have been exercising, drink teas (mostly greens and whites) and maybe the occasional scotch :) My friends all think I have lost my marbles, but that's part of the beauty of it all, I actually just found them!

Whoa, that's not very nice Jack. I don't see any meat on this recipe.

There are several vegan groups in , if this group isn't what

you're looking for.

Thanks so much for the recipe Mary, I'll definitely make it this weekend.

Keep 'em coming!!

Jeez-louise, Jack. Haven't you ever heard of lacto-ovo vegetarianism? Just

b/c her recipe isn't vegan doesn't mean it isn't wanted or appreciated here.

Those who are vegan can usually adjust the other types of recipes to fit their

style.
