Easy Chile Verde3 cups cooked pork shoulder roast chunks1/2 medium onion, chopped2 cloves garlic, minced1 cup canned diced Mexican-style tomatoes1 (4-oz.) can diced green chiles2 tsp. Schilling Mexican Seasoning 3/4 tsp. salt1/4 tsp. black pepperCombine all ingredients in a medium saucepan; stirwell. Bring to a boil. Reduce heat, cover and simmerfor 1 hour, stirring occasionally. Remove cover andcook 5 to 10 minutes more or until liquid has reducedand sauce is thick. Spoon filling into tortillas. Makes 6 to 8 servings.Ground Beef Variation: Instead of pork, brown 2 poundsground chuck in a large skillet; drain fat. Addremaining ingredients; stir well. Sorry--I accidently clicked quick vegetarian when I was going down

the list...... I'm sure it can be easily made to vegetarian tho....I

seldom make chili with meat....I just use the other ingredients

without the meat......:-)

One substitution idea might be one pound of frozen-thawed tofu chunks in

place of the pork bits.
