Exotic Barley Stew (with miso)

Exotic Barley Stew (serves 6) - from Recipes for a Small Planet or some

variant on the theme.

 

1 1/3 cups raw barley, cooked [i use pearl barley - the stuff without the

husks]

1/2 cup dry beans, cooked

3 tb oil

1 onion, chopped

3 cups frozen green beans

2 tsp mint

1/4 cup parsley

4 - 6 cups of stock

3 tb miso

1 tsp salt

2 tsp dill

1 small tin of tomatoes

 

Saute onion in oil until soft. Disolve miso in hot stock and then stir into

the onion. Add mint, parsley, salt, dill, and tomatoes.. Bring to the boil

and add beans, small red ones look good, and barley. Simmer, covered, for

half and hour until the beans and barley are tender, stirring occasionally.

Add green beans in the last 5 minutes or so of cooking. Serve with yoghurt.
