Hello!

My name is Laura and I am newly vegetarian, presently lacto ovo, but

open to alternatives. Looking for some great quick recipes to help

me get on my feet. Does anyone have a " not so quick " but good recipe

for vegetarian baked beans? I want to make them in my slow cooker,

but all the recipes I find call for lard or animal products.

how about using some cans of veggie baked beans & putting them in your slow

cooker & adding your own spices to experiment? You can probably find

vegetarian baked beans in your local health food store.

This recipe is one that my family has used for years and years. I

left out the salt-pork when I made them this time, and added a dash

of liquid smoke towards the end of the cooking time instead. They

were delicious.

 

 

Baked Beans

 

3 cups small white beans (or more depending on the size of your

crockpot. More is ok. I usually just use a full bag. )

1 tsp salt or more to taste.

1/2 c chopped onion

1/4 c molasses

1 c ketchup

1/4 c brown sugar

2 tsp dry mustard

 

Soaking the beans overnight helps speed cooking time, but isn't

necessary. Put all ingredients in a crock-pot, mix well, and fill

with water. Cook on low, stirring occasionally. Simmer until the

beans are tender and the sauce has thickened. If the beans have not

been soaked this takes at least 24 hrs, sometimes as long as 36,

depending on the size and temperature of your crockpot. They're

worth the wait - wonderful flavour, deep dark colour.

This is practically identical to my recipe but I add a little

horseradish also. Gives them a bit of zing. Oh, and I leave out

the liquid smoke.
