Looking for some great quick recipes to help me get on my feet. Does anyone have a " not so quick " but good recipe for vegetarian baked beans? I left out the salt-pork when I made them this time, and added a dash of liquid smoke towards the end of the cooking time instead. They were delicious. Baked Beans 3 cups small white beans (or more depending on the size of your crockpot. More is ok. I usually just use a full bag. ) 1 tsp salt or more to taste. 1/2 c chopped onion 1/4 c molasses 1 c ketchup 1/4 c brown sugar 2 tsp dry mustard Soaking the beans overnight helps speed cooking time, but isn't necessary. Put all ingredients in a crock-pot, mix well, and fill with water. Cook on low, stirring occasionally. Simmer until the beans are tender and the sauce has thickened. If the beans have not been soaked this takes at least 24 hrs, sometimes as long as 36, depending on the size and temperature of your crockpot.
