Texas caviar would be a good one. I don't have a recipe but there is one on www.flylady.net if you scroll down to the bottom of the page and look for appetizers it's among them. I don't know where you live but the Lowes Foods Store usually has this in their deli. Good Luck! Robin in NC

Did they also tell you to hide a dime (or other small shiny coin, don't

know your country) in the peas? Peas are for prosperity in the coming

year.

Sort and pick over a pound of dried peas and soak overnight. I discard

the soaking water, although some don't. Dice a couple of large yellow

onions, mince a couple or three cloves of garlic, and sauté briefly in

good olive oil. Add sautéed seasoning to soaked peas, with salted water

to cover and cook as long as you like. I add a splash of Liquid Smoke

for flavor. Oh, and don't forget to add that dime before serving. The

person who gets the dime in their serving is the luckiest for the new

year.
