I know it's been a while since I posted and all, but I just wanted to let you all know how much I have been enjoying the recipes and all. I do have a small request.... I have been invited to a birthday party on the 11th, and the theme is Carribean... those of us who have been invited have been asked to bring a dish and a beverage. I was wondering if anyone out there has any vegan Carribean dishes (appetizers or whatever) that they could share. Thanks in advance! Carribean Stew - From Moosewood Restaurant Low-Fat Favorites 1 large onion chopped 1/2 tsp salt 2 tsp vegetable oil 1/2 tsp dried thyme 1/2 tsp allspice 1 minced fresh chile, seeds removed 1 large sweet potato, cut in medium sized chunks 2 cups water or vegetable stock 2 small zucchini, cut into 1 inch chunks 11/2 cups drained tomatoes, coarsely chopped 4 cups kale 1 tablespoon lime juice or lemon juice 2 to 4 tablespoons cilantro salt to taste -Sprinkle onions with salt. Saute in oil for about 7 minutes in a covered pot. -add thyme, allspice, and chile and cook for another two minutes -add sweet potatoes and stock, cook for another 5 minutes -add zucchi and tomatoes with their juice, simmer for 10-15 minutes -add kale and cook another 5-10 minutes. -stir in cilantro, lemon or lime juice, and salt to taste "Lori <babydyke2002" <babydyke2002 wrote: Hi everyone.
