I'm Susan from Australia. I have been on this list a while, but have not posted until now.

Here are two recipes from (Creative Vegetarian Cooking) Healthy Fast Food, a booklet put

out by Sanitarium several years ago.

 

Nutmeat-Con-Carne

Serves 8

 

1 TBS oil

1 medium onion, chopped

1 medium green capsicum (pepper), chopped

2 tsps bottled crushed garlic

1/2 cup water

425 g can tomatoes, chopped

3 TBS tomato paste with basil & oregano

1/2 x 40 g packet con-carne recipe mix

1/4 tsp salt

740 g can red kidney beans, drained

1/2 x 430 g can Sanitarium Nutmeat, mashed

 

1. Heat the oil in a large frying pan and stir-fry the onion, capsicum and garlic until soft.

2. Add the remaining ingredients and heat through gently.

3. Serve over rice, in tacos or with corn chips and salad.

 

Per serve:

620 kilojoules (150 calories)

Protein 11 grams

Fat 5 grams

Carbohydrate 14 grams

Sodium 540 milligrams

Calcium 50 milligrams

Iron 2.4 milligrams

Fibre 6 grams

Sicilian Potatoes

Serves 12

 

12 large potatoes

1 TBS oil

1 medium onion, chopped

35 g packet Sicilian Mince recipe mix

430 g can Sanitarium Nutmeat, mashed

425 g can tomato puree

440 g can corn kernels, drained

1 cup frozen peas

 

1. Scrub the potatoes well and prick with a fork. Arrange them evenly around the turntable of a microwave.

2. Microwave on HIGH (100%) for 20-25 minutes, turning halfway through cooking time. Cool.

3. Cut the tops from the potatoes and scoop out the flesh, leaving a 1 cm (1/2 inch) shell. The flesh can be saved and used later for mashed potato or bubble and squeak.

4. Heat the oil in a frying pan and stir-fry the onion until soft. Add the remaining ingredients and simmer for 5 minutes.

5. Spoon the filling into the potato shells.

6. Place potatoes on a tray and bake in a moderate oven, 180c, for 20 minutes (or microwave on HIGH (100%) for 15 minutes or

until heated.

7. Serve with salad.

 

Per Serve:

980 kilojoules (240 calories)

Protein 15 grams

Fat 5 grams

Carbohydrate 32 grams

Sodium 260 milligrams

Calcium 20 milligrams

Iron 2.2 milligrams

Fibre 7 grams

Sanitarium is an Australian health food company which used to be owed by

Seven Day Adventists..

www.sanitarium.com.au it has a lot of nice recipes but I thought people

might have some more...... It wasn't meant to be a joke....

Maybe you had it confused with sanitorium....A.. not O

Thanks for the info! In American English *grin* the words are

interchangable (I checked my Webster's to make sure it wasn't one of

those slang terms that gets misused!) In my area, we have a TB

sanatorium and refer to the mental hospitals as " sanatarium. " And

now I have that song in my head!

I'm so glad someone got it. I was worried since I only wrote 'Just leave me

alone'. After I sent it, I thought some people might not understand that it

was lyrics from the song.

Ahh Yes, the air guitar. It's the only instrument I've mastered.
