Guest guest Posted January 15, 2003 Report Share Posted January 15, 2003 I adapted this recipe for my indoor Grill and it came out good and tasty. Grilled Ginger Tofu 1 16 ounce package of extra firm Chinese style tofu (pressed well, I press it the night before) 1/2 teaspoon dry mustard 1/3 cup sweetner of your choice 3/4 cup water(1/2 cup if the sweetner you are using is a liquid or syrup 1/2 tamari soy sauce 1 Tablespoon sesame oil 4 medium sized cloves of garlic, minced finely or pressed Slice the tofu into 1/4 inch slices. Place the slices in a single layer in a dish (I use a baking dish) Mix all the ingredients together blending well. Pour this marinade over the tofu and allow to marinate for one to two hours. Remove the slices carefully from the marinade and put on the grill. Set the grill for 5 minutes.( you can brush a little more marinade on tofu slices after 3 minutes if you prefer). If you want you can grill and extra two minutes. Serve hot or chilled with any leftover marinade on the side. With out the ginger it wouldnt be ginger grilled tofu. Guest guest Posted January 16, 2003 Report Share Posted January 16, 2003 Scattered Nut Loaf (makes 4 to 6 servings) 1 pack 16 ounce Chinese style firm tofu 1 cup raw nuts (almonds,walnuts, or pecans) mixed nuts is good on scattered days 1 cup soft cooked brown rice.preferably short grain 1 mediuam onion, finely chopped 1/2 teaspoon ground sage 1/2 teaspoon thyme 1 teaspoon salt Pinch of black pepper 1 teaspoon vegan Worcestershire sauce,Braggs Aminos or tamari soy sauce 1 Tablespoon vegan margarine, melted small amount of oil to oil pan( sunflower, light olive or grapeseed) Freeze the unopened package of tofu for at least 24 hours. Remove form the freezer and defrost in the refrigerator for at least 24 hours. When defrosted, wrap the tofu in paper towels and squeeze or press out as much water as possible. Crumble with your hands and set aside. Preheat oven to 375 degrees. Lightly oil a loaf pan. With a food processor, blenderor by hand, chop the nuts to a very fine consistency. Combine tofu, 3/4 cup of the nuts, and all other ingredients except margarine in a large mixing bowl. Mix well, adding a small amount of water if necessary to moisten enough to hold together. Transfer the mixture into the prepared loaf pan, pressing in and smoothing the top with a wooden spoon or rubber spatula. Bake for 15 minutes, then brush the top with margarine. Scatter the remaining 1/4 cup of nuts on top of loaf and continue to bake for 20 to 25 minutes until done. Serve Hot It is well known when I make this with mixed nuts I am generally feeling that way LOL. Each type of nut gives it a distintly different flavor.
