You can just let it go, stirring occassionally, while you clean the house, or work int he yard. By the time Lunch rolls around, you are ready. BTW...I know it is cheating, but I would soak the lentils overnight. They took forever and a day to cook. I don't have exact measuremnts on all, but this is close: Ethiopian Style Lentils and Rice 2 c Fancy Rice (I like Jasmine or Sushi rice) 1 1/2 cGreen Lentils (soaked) Brown Sugar Horsey Mustard about 2 Tbsp Vinegar (I just used white) 2 tbsp 1 Tbsp Soy Sauce (just a dash) 6 oz can Tomato Paste 3 Tbsp Olive or Canola Oil 2 Bay leaves 1/2 fresh chopped onion 1 stalk Fresh chopped celery...or celery salt if you are out Ms. Dash...lots About 1 tsp each of: Tumeric Corriander Cracked Fresh Black Pepper Paprika Sage Curry about 1 Tbsp. Minced or chopped fresh Garlic..equivalent of 2 cloves ********************************************************************* * Rinse rice and drain. Place rice and lentils in Big Ol' Pan Add all seasonings and stir well. Add water until all well covered. Bring to a boil and simmer on low heat for 2 hours or more.. Mixture must be completely reduced, all water cooked out. Rice and beans should be tender. Serrve as a dip..or as an entree...or wraps with sundried tomato.
