Fried Bean Cakes

 

1/3 fresh onion, chopped

1 Tbsp olive oil

1 healthy Tbsp minced garlic

 

1 can red (or kidney) beans

1 can pinto beans

1 can purple hull peas (field peas)

1/2 tsp celery salt

1 tsp paprika

1 tsp cumin

1/2 tsp oregano

1/2 tsp corriander

1/2 tsp salt

cracked fresh black pepper

1 tsp lemon juice

dash hot sauce

 

rice flour

more olive oil

 

Yield: 10 bean cakes

Open cans of beans, and strain well.

 

Sautee' Chopped fresh onion and minced garlic with oil in a

 

regular sized sautee pan (11 " etc).Stir often until onion

 

cooked. This will be just enough to keep the onion and

 

garlic from burning without making the bean cakes too

 

runny. Set aside to cool.

 

When beans well drained,place into food processor and add

 

onion and garlic. Puree'. You can do a portion at a time,

 

or all at once and mix frequently. The beans will want to

 

cling to the blade, so make sure to mix often.

 

Once mixture is blended, form into patties and dust with

 

rice flour (for Gluten free).

 

Sautee bean cakes in original pan used for onion and

 

garlic, using enough olive oil to coat the bottom of the

 

pan.Let the bean cakes cook for a couple of minutes on each

 

side to form a crispy crust.

 

(The bean cakes might stick a little, that is to be

 

expected.)

 

Once cooked, let them a cool a bit.

 

Enjoy!

 

Serving suggestion: on a sandwich with sprouts, tomatoes,

 

and lettuce.

Howdy,

 

I can freeze them right? It is just me, myself and I, and I would like to freeze the extra cakes for future use, since the recipe makes 10 cakes.

 

BTW thanks for a recipe that calls for rice flour. I would like to try flour other than wheat and whole wheat, since I need to be careful with wheat.

This is a brand new recipe I whipped up, and I have not tried

freezing them yet.

 

I will pop one in the freezer today and see how it does.

I tried freezing a bean cake...not bad.

 

I defrosted for 1 1/2 minutes in microwave and cooked for 30 seconds.

 

It was a tad less firm that it started, but the taste is still

fantastic. Using a toaster oven to cook may do better.

 

I like to have mine on a bagel with cucumber and veggies.

I am so glad you are interested. Most of the time I attract all of

the weird looks in the room from what I am eating. ha ha

 

My friend has a Gluten intoloerance, so for her we use rice bread.

 

So far I have tried them on bagels and in pita pockets. YUM!

Hi Paula,

 

I am not allergic to gluten but to gliadin (sp) in wheat. It is a protein similar to gluten. I can get away with eating a little bit of wheat products but space them out like every four days. I can't find substitutes for wheat that I feel fit for human consumption. I hardly eat wheat products. I am still looking for good substitutes though.
