basil! I've got basil!

This isn't a recipe but I love to use extra basil added in with my lettuce in salads with a vinegar dressing - it's really cooling and refreshing. Any kind of salad really but especially salads that are light on the toppings including veggies - dark lettuce leaves, basil, and walnuts are good with a balsamic dressing makes a really wonderful light salad to go along with a main dish when you just want a little something extra. You can also make great fruit salsa's substituting the cilantro for basil.

 

For people who happen to grow to much mint in their gardens - it really grows all over doesn't it! One way to "get rid of it" without feeling guilty because you are simply pitching it is to take a large handful of mint and put it in a tied off cheesecloth and put it under the hot/warm water when you are running a bath. Very refreshing.

I'm just wondering if anyone here has recipes that make good use of basil. My

little herb garden is full of the stuff. I've been doing the tomatoes-and-basil

thing, but I imagine you guys have even more interesting recipes.

 

And Paula, I'm in Oklahoma City, and still slowly prodding the family into

vegetarianism. This is a good group, really!

Nice to "meet" you. We lived in OKC years ago -- I did my undergrad work at OK City University.

 

I have lots of basil, as well. What about some pesto? You can put it on a cookie sheet lined with freezer paper in 1 T. increments, freeze it, and have fresh pesto long after the basil is gone. Since I just returned to work and am struggling with the logistics of it all at the moment, easy ideas such as this are what I ten to focus on!

I imagine you have been doing some pesto sauce too?

That is a great way to use up fresh basil. I envy you

your bountiful harvest. Mine didn't fair so well with our

very hot dry summer and my lack of attention. I will look

for some recipes in my files to see if I find some other

interesting uses for basil, but until then, just toss it into

everything! *lol* Mmmmm
