Guest guest Posted September 1, 2003 Report Share Posted September 1, 2003 This is my favorite vegetarian chili (and I've tried a bunch)! ~Nita * Exported from MasterCook * Vegetarian Chili Recipe By :Serving Size : 8 Preparation Time :0:15Categories : MAIN DISHES--BEANS & LENTILS Amount Measure Ingredient -- Preparation Method-------- ------------ -------------------------------- 4 medium zucchini -- chopped 2 medium onions -- chopped 1 green bell pepper -- chopped 1 sweet red pepper -- chopped 4 cloves garlic -- minced 2 tablespoons olive oil 4 cans Italian tomatoes -- cut up (or diced tomatoes, not puree) 1 can tomato sauce, 15-ounces 1 1/2 cups pinto beans, cooked (15-ounce can) 1 1/2 cups black beans, cooked (15-ounce can) 1 jalapeno pepper -- seeded and chopped 1/4 cup fresh cilantro -- chopped 1/4 cup fresh parsley -- chopped 2 tablespoons chili powder 1 tablespoon evaporated cane juice (or sugar) 1 teaspoon salt 1 teaspoon ground cumin In a dutch oven, saute zucchini, onions, peppers and garlic in oil until tender. Stir in tomatoes, tomato sauce, beans, jalapeno and seasonings. Bring to a boil over medium heat. Reduce heat; cover and simmer 20-30 minutes, stirring occasionally. A dutch oven is just a large 5-quart pot that is pretty shallow vs. tall. You could use any large pan.
