prune paste for egg substitute?

Never heard of that. I just use Ener-G egg replacer. It's wonderful, so

easy and lasts forever or at least 3 years for me and only about $5

It's 1 1/2 teaspoons and 2 tablespoons for 1 egg. I use in pancakes (works

great), muffins (come out softer) and cake mix (doesn't make good cake but

pretty good cup cakes)

One word of caution regarding using Ener-G egg replacer: I used it

once to replace 3 eggs in a carrot cake and it was a disaster. I

think that it's okay to replace 1 or 2 eggs (which I've done tons of

times), but I think maybe 3 is too much. It just didn't hold

together and it ended up very greasy and tasted funny. I'd be

interested to hear if others have had similar experiences and how

they solved this.

I agree, that's why I said I only make cupcakes with it. The top of the

cake becomes sticky-like. I also have not been able to make brownies. They

always stay liquefied. Could be me though.
