TENDER BITS ZUCCHINI-SQUASH SAUTÉ

 

INGREDIENTS:

2 teaspoons olive oil

1 medium onion, sliced

2 small carrots, peeled and sliced on the diagonal

1 can Loma Linda Tender Bits

1 medium-size yellow squash, very-finely diced

2 medium-size zucchini, diced

2 cloves garlic, minced

1 teaspoon grated ginger

1/2 cup pineapple juice

1 large tomato, pureed

1/4 cup of Tamari sauce

 

DIRECTIONS:

Heat oil in large sauté pan over medium-high heat. Add onion and carrots. Cook for about 5 minutes until onion starts getting translucent. Add Loma Linda Tender Bits, squash, garlic, and ginger and sauté for about 5 more minutes. Add the pineapple juice, pureed tomato, tamari sauce, and marinade. Stir and let simmer for a 10 of minutes. Serve hot over rice or noodles.

I was wondering if you could tell me what Loma Linda Tender Bits are?

I am not familar with this... is it a brand and if so what is the

product?

Loma Linda along with Worthington were subsidiaries of Morninstar Farms -- Morningstar Farms is now part of the Kelloggs Company -- the easiest place to find these products seems to be at one of the Seventh Day Adventist books and food stores -- Super G here in the Delaware Valley area had carried this line but no longer -- major disappointment as they have many interesting products -- but hard to find -- how can you sell something if no one knows about them -- Kelloggs really need to better market these lines -- before they decided to get rid of them for lack of sales -- Gloria <chefgloria1030 wrote:

I looked it up online... interesting product... I am going to check

if our local health food grocery store carries it! Hmmm...something
