Guest guest Posted August 29, 2005 Report Share Posted August 29, 2005 TENDER BITS ZUCCHINI-SQUASH SAUTÉ INGREDIENTS: 2 teaspoons olive oil 1 medium onion, sliced 2 small carrots, peeled and sliced on the diagonal 1 can Loma Linda Tender Bits 1 medium-size yellow squash, very-finely diced 2 medium-size zucchini, diced 2 cloves garlic, minced 1 teaspoon grated ginger 1/2 cup pineapple juice 1 large tomato, pureed 1/4 cup of Tamari sauce DIRECTIONS: Heat oil in large sauté pan over medium-high heat. Add onion and carrots. Cook for about 5 minutes until onion starts getting translucent. Add Loma Linda Tender Bits, squash, garlic, and ginger and sauté for about 5 more minutes. Add the pineapple juice, pureed tomato, tamari sauce, and marinade. Stir and let simmer for a 10 of minutes. Serve hot over rice or noodles. I am not familar with this... is it a brand and if so what is the product?
