Anyway, Donna asked me to post it cause she's having a craving... so here it is! All the TVP loaf recipes i could find had egg or cheese. My goal was to make a delicious vegan version. i thought it was a success, and enjoyed this loaf with smashed potatoes, corn, and steamed broccoli. Hearty comfort food. i used the bit of mashed potatoes as a binder in place of the egg i see in so many non-vegan recipes. While i was doing this i thought a bit of instant mashed potato flakes would be a quick & easy substitution for that step. i hope you will try this, play around with it, and let me know what you think. TVP Loaf ~ vegan 1 cup TVP 2 cups vegetable broth 1 onion, finely minced 2 stalks celery, finely minced 3 cloves garlic, minced 2 Tbs. vegan margarine 1 small potato, cooked & mashed [or about 1/4 cup mashed potatoes you have leftover] 1/2 cup bread crumbs 1/2 cup oatmeal 3 Tbs. Brags liquid aminos 2 Tbs. BBQ sauce 2 Tbs. tomato paste 1 tsp. gravy master [or Kitchen Bouquet] Celtic sea salt to taste Garlic oil, to grease loaf pans Heat vegetable broth to boiling, add TVP and remove from heat. Let sit until all moisture is absorbed. Saute the onion, celery and garlic in the margarine until soft. Add this to the reconstituted TVP. Stir in mashed potato, bread crumbs, oatmeal, brags, BBQ sauce, tomato paste, gravy master and salt. Mix completely. Divide mixture evenly between two min-loaf pans that you have coated the insides with garlic oil [or olive oil].
