I did have pressure to eat the meat, but I have conviction. I was questioned about how I get protein. Yada Yada Yada. Meat eaters do not understand that even if you remove the beef from beef-vegetable soup after it is cooked- it is still beef- vegetable soup and the beef has cooked in the soup! Sorry a peav of mine. Maybe I should send them the PETA website next time. Anyways- have a happy happy harvest day. P.S. Sorry for ranting. I have to go through this again on saturday- another Thanksgiving meal! That I can easily live without, BUT my mother-in-laws cornbread stuffing is the best and I asked if she put the giblets in it and guess what She does!!!! Of all the things I look forward too I couldn't eat it. I am going to make one of the more veggie friendly stuffing recipes I got off of the posts. None the less I didn't indulge in anything that would give me a guilty conscience. I'm so proud of myself. My mother-in-law said that I had self control. I can't say it wasn't difficult but I made it through my first one so now I am even more proud of being a Vegetarian. I will shout it to the hills I LOVE BEING A VEGETARIAN!!!! I did find a Hain vegetarian gravy for the potatoes. You will get used to missing out on some good stuff. but enjoying others fully! Now, get MIL's stuffing recipe and just make a batch for yourself, without the giblets! :-) That way next year you'll already know how and can make it for the holiday.
