Don't need a whole avocado a day but it's nice to add a few slices a day to a meal. If I take a sandwich for lunch I have 1/4 avocado, if I don't have it for lunch then I eat 1/4 for dinner. I might make scrambled tofu for breakfast and I'll top with a few slices. I know many people don't care for them but if you keep searching there's a way you might enjoy fixing them and the health benefits are a plus. I cut them in half and sprinkle with a little lemon juice and salt. I love, love, love avacados. I eat them with eggs, on sandwiches and make guacamole when my budget will allow. I have a friend with a tree whose avacados are just about ripe and will be getting a bunch of them the first of the month. I am trying to strech disability income for a family of 4 which includes 2 teens who at times can be bottomless pits. Whoever said teenage girls don't eat that much must have been delusional. My hubby is a diabetic and is hungry all the time (a side effect of being on insulin). I am very slowly trying to convert them to vegitarian cooking. I am at about 3 meals a week. Unfortunately, they like their meat, so it is a slow almost painful conversion , although I have found summer months to be a little easier than winter months. purplepassion <thelilacflower wrote:Kim what state are you in? I love a good sandwich with avacado, cukes, purple onions, sprouts, crumbled gorgonzola cheese, or cheeseless, and crispy lettuce on a good honey whole wheat! So yummy! I also love tomatoes, so I like a plate of tomatoes and avacados with a good dressing as a snack! I know that the dressing is unhealthy but yum anyways! Sometimes I need to indulge!
