Have you made spaghetti and tossed some in or taken frozen Crumbles and tossed a handful in? How are they about meatless spaghetti? I know, it is hard to fill teens up. The girls eat just as much as the guys. Do you make bean and rice enchiladas? I find those as very inexpensive. I make huge pans of these for my nephew and his buddies when they come to play video games. They don't even miss the cheese on top. Making your own enchilada sauce is very inexpensive. Let me know if I can be of any help. I'm pretty good at making a dollar stretch. Oh, this is another idea. I take a pound of pasta, any style like pene, rigatoni, spirals, etc. Boil those up. I will steam a bag of mixed veggies. I then toss the pasta with a little olive oil, Mrs. Dash or Spike, 1 clove crushed garlic, sprinkle of red pepper flakes, little parmesan, some sauteed chopped onion and celery. I will mix everything together and place in a 2 quart casserole dish in layers, between the layers I will p;ace thinly sliced tofu dogs and steamed zucchini slices and a little grated soy cheese. I cover and bake for 30 minutes on 350. Everyone loves this and it's very inexpensive. I don't have a recipe written down nor did I name. With my oldest also being on the swim team, they are constantly carb loading before meets. And yes, I have seen first hand how the girls eat as much as the guys do. I have a pasta recipe I came up with that has cooked pasta (penne, rigati, rigatoni or rotini works well) a meatless sauce, , low fat cottage cheese, drained. Mix all together, put in casserole dish and top with a little mozzerella and parmesan, then bake for 20 minutes. The other pasta idea I have also used, although not with mixed vegis or onions and celery. I cook the pasta. While that is cooking, in a skillet I heat some olive oil, chopped tomato. 3 to 5 cloves of garlic, red pepper flakes and fennel seed. Cook until the tomatos are soft. Drain pasta and toss with sauce. Serve and top with parmesan. I am trying to find some good vegitable soup recipes. My hubby and youngest won't eat any type of squash so that is out. Also, I don't like okra, but other that that I'm open to anything. Also, neither of my kids are crazy about tofu. I think that I had the chunks too big when I threw it in with a vegi stir fry. I usually take broth and toss diced up carrots, celery, onion, zucchini, garlic and potatoes and boil for about 7 mins. then I toss seasonings in and a big handfull of orzo or any other pasta and cook about 10 more mins.. It makes a hearty soup. Anne posted lentils with fruit in the soup area. I made that 2 days ago. You don't taste the fruit, it's awesome. I couldn't stay out of it, it's worth a try and your family may love it. Tofu is wonderful mashed and made into an eggless egg salad or a tufuna salad. Have to tried those in the spreads area of the recipe file? Most people don't care for tofu in large chinks. now I open the container and cut it off and eat plain. I love the stuff. I've had me@t eaters who swore against tofu try mine, how I marinate for my stir fry, and be totally surprized. I generally marinate in soy sauce, crushed garlic, grated ginger, and chili paste, overnight if I can, and you'll never recognize it. Marinate smaller cubes in their favourite stir fry sauce.
